Prices were lower for whole egg and
yolks, and whites were unchanged. The
market tone stabilized at the new lower
price levels. Demand increased and was
moderate to good. Supplies were generally
adequate. Raw material supplies were also
usually adequate, but seller confidence
increased as floor stocks cleared and
inquiry increased; thus, the undertone was
steady to instances firm. Liquid and frozen
eggs (ingredients included) processed
under federal inspection in the East for the
week ending January 4, 1997 were 7%
more than last week, and 4% les< than the
tame week last year.
