FLAN
2 cans evaporated milk
1 can whole or 2 percent milk
/> cup brown sugar (enough to
suit your taste)
6 eggs
1 tablespoon vanilla
Dash of cinnamon, if preferred
Mix eggs, sugar, and milk and
vanilla in blender for 2 minutes.
Pour into containers, set in pan
of very hot water, filled to within
'A inch of the top of the container.
Bake at 350 degrees for one
hour or until set.
My husband Luther and I live
near York Springs in the house
where I was born. We have been
married 41 years.
We farmed there for 30 years.
Now we just truck farm on a few
acres, which keeps us very busy in
the summer.
My husband is retired and has
time to raise sweet corn, green
beans, tomatoes, potatoes, and
other vegetables.
I am still employed at Dallco
Sewing Industry in York Springs,
and have been working there 17
years. We have two sons and five
grandchildren we both enjoy.
I enjoy the recipes each week
and clip a lot of them. My friend
Kay and I are both in Adams Coun
ty Farm Women II and like to share
our recipes with others. We are
both cow-nuts.

CHICKEN AND
BISCUIT CASSEROLE
Chicken and sauce:
V* cup butter
'A cup chopped onion
A cup flour
A teaspoon celery salt
A teaspoon salt
A teaspoon pepper
3 cups milk
3 cups cooked, chopped chicken
Melt butter and saute onion until
soft. Add remaining ingredients
except the flour. Mix flour with
some water to make it paste-like.
Heat ingredients and thicken with
flour/water mixture. Pour into a
9x13-inch casserole dish.
Biscuits;
2 cups flour
1 teaspoon baking powder
% teaspoon salt
'A cup butter
V* cup milk
1 cup cheddar cheese
Mix everything but cheese, roll
onto a floured surface. Spread
cheese on top. Roll up like a Jelly
roll. Cut into 12 slices and put on
top of chicken/sauce mixture.
Bake at 350 degrees for 30
minutes. Can also freeze after
baking.
This recipe was given to me by a
former neighbor, Sylvia Good. I
take this recipe to new mothers and
anyone who needs a meal.
I am the wife of Jay Marvin Herr
for the past 10 years. We sold our
farm equipment and herd of Jersey
cows IVi years ago. My husband
now works for a feed company.

DRIED BEEF
MACARONI
1 can mushroom soup
t'/icups milk
1 cup cheddar cheese, sharp and
cut up
Medium size onion, chopped
1 cup uncooked macaroni
Stir all together and add
A pound dried beef, cut up. Cover
and refrigerate 24 hours or
overnight
Our family lives in Cogan Sta
tion. We have three children: Seth,
Sara, and Rachel.
We live on a dairy farm and milk
55 Holsteins. We raise corn, alfal
fa, soybeans, wheat, barley, and
pumpkins.

AUNT GLENNA’S
SINFUL BARS
1 box lemon cake mix
'A cup butter, melted
1 egg
% cup chopped pecans
1 cup chocolate chips
8 ounces cream cheese
1 box confectioners’ sugar
2 eggs
Mix together cake mix, melted
butter, and one egg. Spread in bot
tom of a greased 9x13-inch pan.
Sprinkle nuts and chocolate chips
over top. Mix together cream
cheese, confectioners’ sugar, and
two eggs. Spread on top of nuts
and chips. Bake at 350 degrees for
45 minutes. Cool and cut in bars.
For variety, use any flavor cake
mix or use different flavor chips
(coconut with chips is good).
My husband Bobbie has lived on
this farm in the heart of the She
nandoah Valley in Virginia for
more than 60 years. We operate a
small dairy with about 40 cows
and 50-60 replacements. We crop
between 80-100 acres, including
corn, small grain, and alfalfa for
haylage.
My Click family members love

these that a niece named this

ORANGE SALAD
3-ounce package orange Jell-0
1 cup boiling water
2 cups miniature marshmallows
3-ounce package cream cheese
1 small can frozen orange juice
1 small can crushed pineapple,
drained
'A cup sugar
1 can mandarin oranges
1 pound small curd cottage
cheese
1 banana, mashed
114 cup whipped cream topping
Mash banana and drain oranges.
Cream cottage cheese and cream
cheese. Dissolve lell-O in boiling
water; add frozen orange juice and
stir until dissolved. Add sugar,
pineapple, oranges, and banana.
Add cheeses and marshmallows.
Mix well. Put in refrigerator until
mixture starts thickening. Stir 3 or
4 times, mixing well. Fold in
cream topping and refrigerate.
My husband and I are retired
and live on approximately 10 acres
in the northwestern area of Lehigh
County. We enjoy gardening,
traveling, and collecting antique
gas engines and tractors.

BAKED OATMEAL
Mix:
V 4 cup oil
l'/j cups brown sugar
3 eggs
Add:
414 cups oatmeal
V* teaspoon baking powder
114 teaspoon salt
114 cups milk
114 teaspoon cinnamon
3 cups fruit
Place mixture in two 7xll-inch
greased cake pans. Bake for 40
minutes in 350-degree oven.
We live on a 90-acre dairy farm
in Bedford County, right behind
the small town of Woodbury. We
milk 58 cows and have about 50
replacement heifers.
We have three girls: Annie, 4,
Joyce, 3, and Rebekah, 1. I also
have a large garden, so between
the children and all the other work,
there's never a dull moment! We
love it on the farm. We also enjoy
Lancaster Farming.

CHEESE SCALLOPED
POTATOES
6 cups cooked, shredded
potatoes
3 tablespoons butter
1 teaspoon salt
2 tablespoons onion
3 cups milk
2 tablespoons flour
Pepper
IV4 cups Velveeta cheese
Cook and shred potatoes. Make
a white sauce of butter, flour, and
milk by melting butter in sauce
pan. Then stir in flour and 'A of
milk. Stir rapidly to remove lumps;
add the rest of the milk. Stir until
thickened. Add seasonings and
114 cups diced cheese. Cook until
cheese melts. Put potatoes in
crackpot and pour sauce over top.
Cook on low for 4 hours. Optional:
sprinkle with paprika and cook on
high for 2 hours.

DOUBLE STRAWBERRY
HEALTH SHAKE
1 cup sliced strawberries
8 ounces strawberry lowfat
yogurt
1 cup ice cubes
1 cup milk
'A cup nonfat dry milk
2 tablespoons sugar
In the container of an electric
blender, combine strawberries,
yogurt, ice cubes, milk, dry milk,
and sugar. Blend until smooth, 1 to
2 minutes. Serve immediately.

FROSTED BANANA BARS
'/a cup butter, softened
2 cups sugar
3 eggs
l'/a cups mashed ripe bananas.
1 teaspoon vanilla extract
2 cups flour
1 teaspoon baking soda
Pinch salt
Frosting:
Vi cup f butter
8-ounccs cream cheese,
softened
4 cups confectioners’ sugar
2 teaspoons vanilla extract
In a mixing bowl, cream butter
and sugar. Beat in eggs, bananas,
and vanilla. Combine flour, baking
soda, and salt; add to creamed mix
ture and mix well. Pour into a well
greased ISxlOxl-inch pan. Bake
at 350 degrees for 25 minutes or
until bars test done. Cool. For
frosting, cream butter and cream
cheese in mixing bowl. Gradually
add confectioners’ sugar and van
illa; beat well. Spread over bats.
Yield 3 dozen.
I’m a farm boy who likes to help
my daddy in the bam and feed
calves. I also like to ride along on
the tractor and drive skid loader.

POTATO SOUP
S cups chopped, peeled potatoes
'A cup chopped onion
2 cups water
1 teaspoon salt
Dash pepper
'A teaspoon dried parsley
3 tablespoons flour
2 'A cups milk
4 chicken bouillon cubes
Combine onion, potatoes, and
water in boiling pan. Bring to a
boil. Add bouillon cubes, parsley,
pepper, and salt Cook, covered, 20
minutes or until tender.
Combine 1 cup of milk and
flour. Add to soup. Simmer until
thick, stirring constantly.
Add remaining milk. Heat until
hot (excellent with Rivels).

Lebanon County with my husband
Dean and son Douglas, who will
be 1 year old.
We are a June Is Dairy Month
family as all of our birthdays are in
June.
We hope to someday have our
own farm, where we can raise our
children as we were raised. In the
meantime, we enjoy our old home
along the Snitz Creek.
This recipe is one my favorites
to make on cold winter nights.

CHEESEBURGER PIE
1 pound ground beef
Chopped onion to taste
Vi teaspoon salt
3 eggs
IVi cup milk
V* cup biscuit mix
Pizza sauce
1 cup shredded cheese
Brown meat and onion; stir in
salt. Put in baking dish. Beat eggs,
milk, and biscuit mix until smooth.
Pour onto meat. Bake at 25
minutes, then top with sauce and
cheese. Bake eight more minutes.
We like this as much as pizza
and it is easier to make.
