TUNA-CORN SAUCE
ON TOAST
/ cup mayonnaise
2 tablespoons flour
1 cup milk
1 teaspoon minced onion
'A teaspoon salt
'A teaspoon pepper
6/2 ounces canned tuna, drained
and flaked
1 cup whole kernel corn,
drained
'A cup grated Cheddar, Ameri
can, or Velveeta cheese
In 1-quart saucepan, combine
mayonnaise and flour. Gradually
stir in milk, onion, salt, and pepper.
Heat over low heat and stir con
stantly until mixture reaches a boil.
Add tuna, cheese, and com. Stir
and heat until mixture is hot and
cheese is melted. Serve over toast
Serves 3-4.
My husband, children, and I live
on a dairy farm in the northwest
ern part of Berks County. This is a
favorite recipe that is quick and
easy to make.

HOT MILK
SPONGE CAKE
1 cup milk
2 cups sugar
2 cups flour
2 teaspoons baking powder
'A cup butter
5 eggs, beaten until golden
yellow
1 tablespoon vanilla
Pinch of salt
Add sugar, flour, baking pow
der, and salt to well-beaten eggs
and mix. Measure milk and butter
into a microwave-safe container
and heat until butter is melted. Add
to other mixture and mix well. Add
vanilla last Bake at 350 degrees
for 30 minutes in ungreased,
oblong pan.
Topping:
As soon as removing cake from
oven, rub 'A cup of butter on top
until melted, then sprinkle with
approximately 1 cup of confec
tioners’ sugar.

POPOVER PIZZA
1 pound ground beef
1 chopped onion
IS ounces spaghetti sauce (or
VA ounces dry spaghetti sauce mix
and 15'/2 ounces tomato sauce)
A cup water
8 ounces mozzarella cheese,
grated
Brown beef and onion. Add
sauce and water. Mix together and
simmer 10 minutes. Place into a
9x13-inch pan. Add cheese on top.
Topping:
2 eggs
1 cup milk
1 tablespoon vegetable oil
1 cup" flour
'/i teaspoon salt
A cup parmesan cheese
Beat first three ingredients until
foamy. Mix flour and salt until
smooth. Pour over meat mixture.
Sprinkle with parmesan cheese.
Bake at 400 degrees for 30
minutes.
This pizza recipe recently
became a family favorite. Of
course, anything pizza-related is a
big hit in our house.
I enjoy cooking and baking,
especially with dairy products. In
fact, I can’t seem to make a meal
without using milk or milk
products!
We live on a 140-acre dairy
farm and milk 34 cows and raise
our own replacement heifers.
It’s encouraging to see the
children grown in their responsi
bilties in caring for the animals,
helping with the fieldwork, and at
the same time taldng pride in what
is getting accomplished in making
our farm a better place to live. We
are thankful to God for being able
to contribute in our own small way
to the farming industry.

LEMON ICE CREAM
3 large eggs
2% cups granulated sugar
A teaspoon salt
2 tablespoons grated lemon zest
VA cups fresh lemon juice
1 quart half and half
1 quart heavy cream
'A teaspoon yellow food
coloring
Chipped ice
Salt for freezing
Beat eggs in a large mixing bowl
for 1 minute. Add salt, zest, and
sugar, beating until well-blended
and smooth.
Stir in lemon juice, then add half
and half and cream. Stir in yellow
coloring.
Refrigerate 3 hours until well
cooled.
Pour into 1 gallon ice cream
freezer can. Using ice and salt,
crank up your freezer. When fro
zen, spoon into plastic container
and place in freezer to ripen for at
least 2 hours.
CHOCOLATE FUDGE
SUNDAE DESSERT
2 cups flour
2 tablespoons sugar
1 cup butter
'A cup chopped nuts
Mix the above ingredients and
blend until well mixed. Add nuts to
mixture. Press in a 9x13-inch pan
and bake at 350 degrees for 15-20
minutes.
Topping:
3 large boxes of chocolate
instant pudding
514 cups milk
8 ounces whipped cream
topping
Mix together pudding and milk
and beat until smooth. Cool crust
and put topping on. Put whipped
topping on pudding mixture. May
garnish with cherries, nuts, or
coconut.
I enjoy this for a quick dessert.
The wonderful thing about this
recipe is that the ingredients are
usually right in your kitchen.
My husband, brother-in-law,
and father-in-law run a 600-acre
farm. It consists of chipping pota
toes and beef cattle.
My two sons, Marcus, 3, and
Ethan, 1, have already helped out
feeding the cows and riding
around in the tractors. Although I
was not raised on a farm, I hdve

FRESH PEACH DESSERT
Crust:
l A cup butter, softened
VA cup flour
14 cup chopped nuts
Mix well and press in a large
9x13-inch pan. Bake at 350
degrees for 10 minutes and let
cool.
Filling:
Whipped cream
1A cups confectioners’ sugar
8 ounces cream cheese
Mix well and spread over crust
Lay fresh peaches over the filling.
Glaze:
1 cup sugar
4 tablespoons peach Jell-0
4 tablespoons flour
1 cup water
Mix well and boil for 5 minutes.
Pour over peaches. Refrigerate.
This recipe is very refreshing
and fun to make.

Jacob is 7. My husband, Lome,
worked on a farm for 10 years. We
live in a farm house but aren’t
farming at the present time. We
want to get back into farming in the
future.

114 cups butter
114 cups flour
Bake at 350 degrees until golden
brown (15-20 minutes)
After crust is cooled, mix
together and spread on top of crust:
8 ounces cream cheese
1 cup confectioners’ sugar
Mix together and spread on top
of above mixture:
2 small boxes coconut cream
pudding
3 cups milk
Spread whipped topping on top.
Sprinkle with toasted coconut.

burg area, where we are raising
crops and dairy heifers.
We have two boys, Jared and
Aaron, ages 4 and 5, who love
either farming or playing farm.

CHICKEN CASSEROLE
4 slices bread, cubed and put in
bottom of 13x9-inch cake pan
2 cups cooked chicken pieces
'A cup mayonnaise
Dash pepper
'A teaspoon salt
Vi cup chopped onion
I'A cup milk
2 eggs
10% ounces cream of celery
soup.
Delsie Slack
Mix together and pour over
bread cubes. Add:
' 1 cup cubed potatoes, uncooked
1-2 cups peas uncooked
5 slices bread, cubed
1 stick melted butter
Stir and put on top of every
thing. Bake at 330 degrees for 1
hour.
