ANSWER Bernice Poliskiewcz wanted egg-free cake
and cookie recipes. Here are some from Jeanette Martin,
Myerstown; Mrs. David Fisher, Lewistown; and Ruth Shirk,
Lebanon.
3Vt cups flour
2 cups packed brown sugar
2 teaspoons baking soda
1 teaspoon salt
1 teaspoon cinnamon
'A teaspoon nutmeg
1 cup water
Vi cup oil
2 teaspoons vinegar
1 cup applesauce
1 cup nuts (optional)
Mix together all ingredients. Bake at 350 degrees for 35-40
minutes.
Optional for carrot cake, omit cinnamon, nutmeg, and
applesauce. Add 1 cup carrots.
Seven-Layer Cookies
Vi cup butter
1 cup graham cracker crumbs
1 cup coconut
1 cup chocolate bits
1 cup butterscotch bits
1 cup condensed milk
1 cup chopped nuts
Melt butter in 9x12-inch cake pan. Layer each ingredients
as listed. Press down lightly. Bake at 350 degrees for 30
minutes.

Vi cup black walnuts, ground
Sift together flour and ground walnuts
4 tablespoons butter
*/* cup brown sugar
’/«cup light corn syrup
'A teaspoon vanilla
Melt butter. Add brown sugar and syrup. Bring to boil.
Remove from heat and add flour mix and vanilla. Drop by
teaspoonfuls onto foil-lined baking pans. Spread to make
two-inch circle, leaving 1-inch space between cookies. Bake
8 minutes at 350 degrees. Cool completely before removing
foil.
IVi cups flour
V/i cups oatmeal
Vi teaspoon baking soda
1 cup brown sugar
Pinch salt
V* cup butter
Mix first 5 ingredients. Cut in butter. Press into 9x12-inch
baking pan, reserve V* cup.
6 ounces dried apricots
'A cup sugar
1% cups water
2 teaspoons cornstarch
Cook apricots in 1 cup water until water is gone. Chop apri
cots and add sugar and cornstarch, and 'A cup water. Spread
over crust. Sprinkle crumbs on top. Bake at 350 degrees for
30 minutes.
