You can’t tell from the external appear ance of pumpkin or squash which contains more Vitamin A, but research shows that one cup of cooked and mashed acorn squash contributes 2,700 Hi’s of Vitamin A; the same amount of a Butternut squash contains 13,120 Ill’s, and a Hubbard squash has a little over 10.000 lU’s. An orange pumpkin has 2,650 Ill’s of Vitamin A. Squash is classified as either winter or summer squash. Winter squash, such as Hubbard or butter nut squash, has a tough, hard skin that is never eaten. Winter squash tastes a good bit like sweet pota toes and may be substituted for them. Summer squash such as zuc chini or basic yellow squash has soft skin and lots of seeds, both of which may eaten with the flesh of the squash. Acorn squash is a hard-skinned squash available from fall to early spring. Because of its bland flavor, it is ideal to stuff. Here are some of the different varieties and a brief description of them.
