Leif Eriksson Day
A good week for explorers, with Columbus Day and
Leif Eriksson Day both on October 9. In 1977
President Jimmy Carter proclaimed Leif (the Lucky)
Eriksson Day, in commemoration of the Norse explor
er. The exact date and site of Eriksson’s discovery of
America, around the year 1000, are uncertain. Some
historians believe that Eriksson landed in North
America, somewhere between Nova Scotia and
Virginia, up to 488 years earlier than Columbus.

Pickled Cabbage
1 nmdlum cabbage
1 groan pepper, chopped
1 cup auger
1 cup elder vinegar
1 bay leaf
1 stick cinnamon
salt
Shred, wash, and drain
the cabbage and put it,
overnight, in a brine of
one part salt to nine parts
water. Drain and squeeze
out excess moisture,- then
mix with the pepper.
Combine the sugar, vine
gar, spices, and 4 cups of
water and boil for 5 min
utes. Pack the cabbage
into hot, sterilized jars
and pouf in the boiling
liquid to cover. Seal and
let set for at least 2 weeks.
Make* 4 pints.
