Bring to a boil, cover, and cook
over low heat until rice is tender
and has absorbed most of the milk,
about 45 minutes. Add butter,
sugar, vanilla, raisins, and eggs.
Turn into a buttered 2-quart casser
ole. Sprinkle with cinnamon. Bake
at 350 degrees for 20 minutes.
Yields 6 servings.

CHINESE FRIED RICE
1 cup regular long-grain rice
6 large eggs
'/a teaspoon salt
Salad oil
'A pound cooked ham, diced
'/a cup frozen peas, thawed,
drained
1 tablespoon green onions,
chopped
1 carrot, shredded
Cook rice according to package
directions. In medium bowl, with
fork, beat eggs and salt slightly: set
aside.

In non-stick 12-inch skillet over
medium heat, in 2 tablespoons hot
oil, gently stir in rice until rice is
well coated with oil. Push rice to
one side of skillet.
In same skillet over medium
high heat, heat 1 tablespoon oil
until very hot; pour in eggs. Cook,
with spoon, stirring quickly and
constantly, until eggs are the size
of peas. Add rice and heat. Stir in
ham, peas, and carrots. Heat thor
oughly. Sprinkle with green onion.

1 teaspoon cooking oil
'A cup chopped onion
114 teaspoons salt
Vt teaspoon pepper
Dash garlic salt
'/> teaspoon thyme
'/« teaspoon oregano
'A small bay leaf crushed
2 cups cooked tomatoes
lO'/S -ounce can cream of
mushroom soup
'/i cup regular uncooked rice
16-ounce can corn
3 tablespoons butter, melted
'/i cup grated cheese
4 stuffed olives, sliced
Cook beef in oil until light col
ored. Add onion and cook until
transparent. Add remaining ingre
dients except cheese and olives.
Mix well and spoon into a 3-quart
baking dish. Top with grated
cheese and cook covered at 330
degrees for 45 minutes. Remove
from oven and garnish with olives.
Yields 6-8 servings.
