Summer’s Fleeting Youth?
August 28 marks the Canadian Summer Holiday. It’s
also the Feast Day of St. Augustine of Hippo (354-
430), a man of rhetoric who repented of his "wild
youth” in Carthage. Summer and youth are both fleet
ing. We “welcome the coming, speed the parting guest,”
but few of us like to see summer end. If it’s any com
fort, time moves a little slower in summer, or at least the
grandfather clocks would suggest so. It turns out that
metal pendujums expand with the heat, making them
slightly longer and slightly slower. So enjoy your extra
bit of summer and extended youth
thereat though they may be.

Pick over, wash, drain,
and crush berries. Add
water and boil until
berries are soft. Stir in sugar
and boil to a jelly (about
70° F.) Stir in lemon juice,
jur into hot, sterilized jam
lars, leaving 1/4-inch head
Wipe rims and
threads clean. Top with hot
sealing lids and process in
boiling water canner for 5
minute. Let cool for 12 to
24 hours.
Makat about 7 half-pints.
