Dominion Day in Canada
Called variously Canada Day, Dominion Day, or
Confederation Day. July I in Canada celebrates the
date in 1867 when the provinces to our north were
united in Dominion The Maritime Provinces were ini
tially reluctant to join, hoping to unite among them
selves. but Nova Scotia and Prince Edward Island were
convinced early on. (Newfoundland held her ground
until 1948, then joined.) It took until 1931 before
Canada was proclaimed a self-governing Dominion
within the British Empire. As recently as 1982, Canada
took a step toward its independence by securing
the right to amend its constitution

nr Use club soda to clean up a mess on fabrics, rugs, or
carpet and prevent a stain.
Fresh Pea Soup
4 cups shslled peat (about 4
pounds fresh unshelled,
peat)
4 cups water
1 teaspoon sugar
salt and pepper to taste
1/2 cup dry, white wine
(optional)
4 tablespoons butter
4 tablespoons flour
Cook the peas m the
water and sugar for 30
minutes. Blend, or
press through a sieve.
Season with salt and pep
per. and add wine if
desired Melt the butter in
a small saucepan and
gradually stir in the flour.
Add a cup of the soup to
the butter and flour; mix
well, then combine this
with the rest of the soup.
Heat gently, stirring often,
until thickened.
Makes 4 servings.
