CREAM OF BROCCOLI
SOUP
1 cup water
10-ounce package broccoli or
fresh head broccoli
3 cups milk
8-ounces processed cheese,
cubed
'/j cup flour
'/> cup shredded carrots
Croutons for garnish
In large saucepan, cook broccoli
in the water. Do not drain. Put
milk, cheese cubes, and flour into
blended container. Cover and
puree. Add mixture to broccoli.
Cook, stirring frequently over
medium heat until hot and mixture
thickens. Add carrots. Serve garn
ished with croutons. (Hint: I like to
cook in the microwave so I don’t
have to be concerned about scorch
ing. You still need to stir frequent
ly when microwaving as the mix
ture thickens.
I am the mother of four children
from 13 to 4 years old. Weallenjoy
this recipe very much. My husband
Ken and I both grew up on farms,
but, we do not farm now.
The children have market lambs
with the Lancaster County 4-H
Woolies Club. Ken is president of
Lancaster Level-Flo, Inc., a manu
facturer of silo filling systems and
accessories.
I help at the children’s schools,
am active in our church, and a
board member of the S. June Smith
Center Foundation.
I enjoy being a wife and mother
and try my best at keeping our
house a home!

My husband Mickey and I have
a 4-year-old daughter Susan. We
live near Harmony in Caroline
County, Maryland, on a farm that
has been in my family since 1857.
Last year Maryland started a Cen

plus we do custom baling.
