January 27 is the birthday of Charles Lutwidge
Oodgson, English mathematician and Oxford pro
fessor. Although his scholarly works are largely for
gotten, he is well-remembered as Lewis Carroll, the
author of Alice's Adventures in Wonderland and
Through the Looking-Glass. Dodgson hand wrote and
illustrated the first manuscript and presented it as a
gift to Alice Liddell, daughter of an Oxford dean. The
story was later revised and expanded for publication.
A trip upriver from Oxford to Oodstow with Alice
and her sisters, provided the inspiration for the story.

Apples and Cream Pie
4 medium apples, peeled,
cored, and sliced
1 unbaked 9" pie shell
1 cup whipping cream
3 tablespoons flour
1 teaspoon cinnamon
1/4 teaspoon nutmeg
1 cup sugar
1 egg, beaten
1 teaspoon vanilla
1/8 teaspoon salt
3(4 cup coarsely
chopped walnuts
Arrange apples in pie
shell. Mix together
cream, flour, spices,
sugar, egg, vanilla, and
salt until well blended.
Pour over the apples.
Sprinkle with walnuts.
Bake for 10 minutes at
450° F, then reduce
heat to 350° F
and bake until
