TOWSON, Md. Knowledge
about milk products and the dairy
industry could win you cash and
U.S. Savings Bonds at this year’s
Pennsylvania Farm Show, as the
Middle Atlantic Milk Marketing
Association (MAMMA) presents
the “Dairy Derby.” At booth 338
in the main exhibition hall, show
goers can watch, and possibly par
ticipate in a Hollywood-style
gameshow.
The purpose of the exhibit is to
educate consumers. Contestants
will be asked questions on a varie
ty of dairy-related topics from
cows to cottage cheese. Contest
ants won’t have to be agricultural
experts, but knowledge about the
dairy industry could be profitable.
The “Dairy Derby” will have
two parts. First, four contestants
will appear on stage and compete
against each other as they answer
dairy-related questions. Each
question will be worth 10 points.
The first person to win 50 points
will be declared the winner, and
will move onto the exciting cash
cube.
‘The cube is basically an over
sized phone booth with a big
blower in it,” says “Dairy Derby”
game show host. Bill Snitcher,
MAMMA’S Marketing Director.'
“Inside the cube will be several
hundred dollars in cash, plus certi
ficates for well over $l,OOO per
day in U.S. Savings Bonds. Once
the blower is turned on, the con
testant will have one minute to
catch what they can, and slip it out
of the cube through a small slot
What they are able to get out of
the cube is theirs to keep. The
trick is to catch the cash or bonds,
because inside the cube, it’s like
standing in the middle of a torna

for the ham and bean soup that was sold at the Gordonville

Ham And Bean Soup
3 or 4 pounds turkey ham
1 gallon Great Northern beans
2 quarts potatoes, cooked, chopped fine
2 medium onions, chopped fine
1 pint carrots, chopped fine
1 pack celery, chopped fine
Tomato or V-8 juice
Salt and pepper or seasonings desired
Chop ham and brown lightly in 12-quart kettle. Add pota
toes, onions, celery, and carrots after they have been cooked.
Add beans and tomato juice and seasonings as needed; add
water if necessary.

Va cup chopped blanched almonds, walnuts, pecans, Brazil
nuts or flaked coconut
About 30 minutes before serving, butter 9x5-inch loaf pan.
In a small bowl, beat cream cheese and sugar with almond
extract until smooth. Stir in nuts. Press into pan. Refrigerate
until firm. Cut into squares. Keep refrigerated until served.
Makes 30 squares or one pound.
Peanut butter; Prepare as above but substitute 2 tables
poons of creamy peanut butter for almond extracts and use
V* cup chopped salted peanuts instead of other nuts.
Cherry nut: Prepare same as above but add one 4-ounce
container red candied cherries, chopped, and use only V I cup
chopped blanched almonds.

German Meat Loaf
2 pounds ground beef
2 cups caraway rye bread crumbs
8-ounce can sauerkraut, drained reserving juice
'A cup sauerkraut juice (add water to make 'A cup)
'A cup onion, minced
2 eggs
'/«teaspoon pepper
Mix all ingredients. Make meat loaf in 9x5-inch loaf pan
Bake VA hours at 350 degrees. Makes 8 servings.

homemade vanilla fudge that does not require lengthy cook

No-Cook Cheese-Nut Fudge
3-ounce package cream cheese, softened
2Vi cups confectioners’ sugar
'/« teaspoon almond extract
