recipe for a lobster or crabmeat dip that is very delicate and
has few ingredients. Thanks to Sarah Clark. Breezewood for
sending one.
1 tablespoon lemon juice
17V6 -ounces canned crab meat, drained, flaked and cartil
age removed
Vt cup dairy sour cream
% cup mayonnaise or salad dressing
'/■teaspoon salt
Paprika
In small bowl, sprinkle lemon juice over crab meat. Let
stand 10 to 15 minutes, blend in sour cream, mayonnaise or
salad dressing, and salt. Chill at least two hours before serv
ing. Sprinkle with paprika.

sweet pickled peppers to use on steaks, subs, hamburgers or
a side dish. Thanks to Richard Randall. Forksville, and
George Wismer, Plumstead, for sending recipes.
Pickled Peppers
3 pints sweet or hot peppers, washed, seeded, and cut as
desired
Place pepper in jars. In saucepan, mix the following:
1 quart vinegar
1 pint water
1 tablespoon cannjpg salt
1V: tablespoon vegetable oil
3 cups sugar
Blend and bring to a boil. Boil 3 minutes. Pour brine over
peppers. Put on two-piece jar rings and seal. Makes six
'A -pint jars.
Pickled Hot Peppers
8 cups hot peppers
8 cloves garlic
2 cups cider vinegar
1 % cup sugar
J /« cup water
1 teaspoon mustard seeds
Vi teaspoon salt
Sterilize four one-pint jars and lids. In large saucepan,
place sliced pepper in enough water to cover. Heat to boiling
and drain. Pack into jars. Place two cloves garlic in each jar.
Heat vinegar, sugar, water, mustard, and salt to boiling. Pour
over peppers in jar. Leave ’/« -inch space at top. Seal with lids
and process 5 minutes in boiling water bath.

The Eastern National, a general
show, is also recognized as the
