A Link with the Past
October 25 marks the anniversary of the opening of the Erie
Canal in 1825. The 363-mile-long canal opened an impor
tant water route from Lake Erie to the ocean, but con
vincing Congress to authorize funding for the project was a
long and difficult process. The canal's champion. Governor
De Witt Clinton of New York, originally approached
Congress in 1810 His first plan was rejected, but he tried
again in 1815, and funding was finally approved in 1816.
Construction on the $7.6 million project was started on July

1823, his supporters rallied and he

Buttermilk Corn
Bread
1 cup whole wheat flour
1 cup eommeel
2 teaspoons baking powder
1 teaspoon bskfhg soda
1/2 teaspoon salt
11/2 cups buttermilk
2 eggs
1/4 cup vegetable oil
1/4 cup brown sugar
Combine flour, cornmeal,
baking powder, baking
soda, and salt. In a sepa
rate bowl whisk together
remaining ingredients
until smooth and add to
£-4 the flour mixture. Pour
"Ni into a greased 9-mch
square pan and bake at
400° F for about 20 min
utes, until golden brown
