One evening a guest at'the elegant Saratoga Springs, New York, resort found the French fries too thick for his taste. He sent the potatoes back. " requesting thinner fries. When the second batch of thinner fries was also rejected, chef George Crum lost his patience. Deciding to show that guest a thing or two, he cut paper-thin pieces of potato and fried them to a crisp. Instead of being indig nant. the guest was ecstatic, and the crispy, browned chips became a house specialty, Saratoga Chips. The chips were packaged and , sold locally, then throughout New England, and eventually, Crum, whose temper started it all, opened his own restaurant Icatunng potato chips.
