A New Snack is Born
In the summer of 1853, French-fried potatoes were a popular
item on the Moon Lake Lodge's menu. One evening a guest
at'the elegant Saratoga Springs, New York, resort found the
French fries too thick for his taste. He sent the potatoes back.
" requesting thinner fries. When the second batch of
thinner fries was also rejected, chef George Crum
lost his patience. Deciding to show that guest a
thing or two, he cut paper-thin pieces of potato
and fried them to a crisp. Instead of being indig
nant. the guest was ecstatic, and the crispy,
browned chips became a house specialty,
Saratoga Chips. The chips were packaged and
, sold locally, then throughout New England, and
eventually, Crum, whose temper started it all,
opened his own restaurant Icatunng potato chips.

Beat all ingredients together
until well mixed. Place in

uncovered at 350° F for 20 min
