for mock pecan pie made with dried beans. Thanks to a Rein
holds reader for sending a recipe.
Mock Pecan Pie
2 cups packed brown sugar
V 2 cup margarine or butter, melted
1 tablespoon vanilla
4 eggs, beaten
1 cup pinto beans, cooked and mashed
10-inch unbaked pie shell
In mixing bowl, beat together sugar, butter, vanilla, and
eggs. Stir in beans. Pour into pie shell. Bake at 350 degrees
for 45 to 50 minutes or until a knife inserted in center comes
out clean. Serve warm or chilled with whipped cream or vanil
la ice cream.
ANSWER Fay Leslie, Woodstown, N.J., wanted a
recipe for spoon bread, which is soft and of pudding texture.

Spoon Bread
1 cup milk
1 cup water
1 cup cornmeal
1 teaspoon salt
2 eggs, separated
2 tablespoons baking powder
1 tablespoon butter
Place milk and water in saucepan. Add cornmeal and salt.
Cook 5 minutes. Add beaten egg yolks, baking powder, but
ter, and stiffly beaten egg whites. Pour into greased casserole
and bake in 425 degree oven for 40 minutes. Serves 6.

for green tomato pie with raisins and a top crust. Thanks to
Margaret Hill, Apalachin, N.Y., for sending a recipe.
Green Tomato Pie
Pastry for 2-crust pie
4 cups thinly sliced green tomatoes
1% cups sugar
'A teaspoon cinnamon
'A teaspoon nutmeg
% teaspoon salt
4-5 tablespoons flour
2 tablespoons lemon juice
Raisins, as desired
To peel tomatoes easily, immerse in boiling water until
skins slip off easily, about 3 minutes. Blend together sugar,
cinnamon, nutmeg, salt, flour, lemon juice, and raisins. Toss
with green tomatoes. Place in pastry-lined 9-inch pie pan.
Adjust top crust and flute edges, cut vents. Bake in 425-de
gree oven until tomatoes are soft and crust is lightly browned,
about 50 to 60 minutes.

County Dairy Princess. ‘There are
a lot of fun things to do. Like all of
the parades, seminars, dipping ice
cream in Philadelphia and the
pageant in Harrisburg. Even when
something might go wrong there
are lots of better times to come.
Radio talks, TV appearances,
meetings, school promotions,
handing out ribbons at the Tioga
County Fair, also the Jersey Show
and Districts. A scrapbook is kept
and judged at seminar and
pageant Being the Tioga County
Dairy Princess is a lot of fun, any
one can do it and will really be
rewarded by the experience.”
Dairy Maids ages 13-16 are
also needed. These girls help the
Dairy Princess at many functions.
It is great training for the day
when they will be a Dairy Prin
cess. Applications are at the exten
sion center. The Dairy Pageant
will be June 21 at the Mansfield
Methodist Church.
