With pastry blender or 2 knives, cut in butter until mixture resembles coarse crumbs. In small bowl, combine egg, vinegar, and 1 tablespoon ice water. Sprinkle over cornmeal mixture, stirring with fork just until dough holds together, adding water if neces sary. Shape dough into disk. Wrap and refrigerate at least 30 minutes. Filling: Meanwhile, combine chicken with 1 teaspoon salt and waterto cover in large saucepan. Bring to a boil, reduce heat and simmer gently 10 minutes. Drain, then cool to room temperature. Shred into bite-size pieces. Meanwhile squeeze excess liquid from frozen spi nach. Heat oil and butter in large skillet over medium high heat. Add spinach, garlic, raisins, pine nuts, and proscuitto. Cook, stirring occasionally, until liquid is eva porated, 5 minutes. Transfer to large bowl. Add chicken, eggs, cream, 'A teaspoon salt and pepper. Preheat oven to 350 degrees. Divide pastry into 2 pieces, one slighly larger than the other. Between 2 sheets of floured wax papper, roll larger piece into 11-inch circle. Fit into 9-inch pie pan. Spoon filling into pie pan. Roll remaining pastry as directed above into 10-inch circle. Brush edge of bottom pastry with water. Place pastry over filling: trim and flute edges. Cut vents on top crust. Bake 45 to 50 minutes, until pastry is gol den brown. Makes 8 servings.
