3 cups split peas
3 quarts water
3 carrots, chopped
2 sticks celery, chopped
1 sweet potato, peeled and
chopped
1 onion, chopped
1 clove garlic, minced
1 bay leaf
1 teaspoon salt
1 teaspoon basil
% teaspoon marjoram
'h teaspoon cumin
'h teaspoon thyme
Rinse peas Bring peas and
water to boil in large pot
While peas cook, chop
vegetables Add remaining
ingredients and simmer for
2 hours or until done,
adding water as needed
Makes about 4 quarts
