Bedford County 4-H’ers
Present One-Act Play

BEDFORD (Bedford Co.)
Something new was added to the
Bedford Fair this year. Bedford
County 4-H Players presented
“Beware the Genies,” at the 4-H
Center as a part of the fair.
Director Alecia Gibson, a sum
mer intern at the local extension
office, chose and directed the one
act play, which involved the
importance of recycling and tak
ing care of the earth on which we
live.
Gibson, a student at Shippens
burg University, majoring in com
munications and public relations,
said she appreciated all of the help
given to her in this first time
venture.
Local theatre actors, Bill Snyd
er, and Dick Rice gave of their
time to talk to the aspiring thes
pians about acting.
Old Bedford Village loaned
equipment and gave advice; Cathy
Clevenger helped with photogra
phy and props; and all parents
pitched in to do their part.

Co.) Americans love salsa...so
much so that this langy condiment
surpassed ketchup last year in
pounds consumed per person.
Now that tomatoes and peppers
are overflowing in home gardens,
it is a good time to try your hand at
making and putting up your own.
Most salsa recipes are a mixture
of tomatoes, onions, peppers and
spices. If made with a sufficient
amount of acidic ingredients
(tomatoes, lemon juice, vinegar),
salsa can be processed safely in a
boiling water canncr Without suf
ficient aid, use a pressure canncr.
The type of tomato you use in
making salsa will affegt us qual
ity. Paste tomatoes, such as Roma,
have firmer flesh and produce
thicker salsa than large slicing
tomatoes. Although both types
make good salsa, slicing tomatoes
usually yield a thinner, more wat
ery salsa than paste tomatoes. Sal
sa can be thickened by adding
tomato paste.
Peppers range from mild to
fiery in taste. Very hot peppers are
usually small and provide a dis
tinct taste to salsa. Jalapeno is the

most popular hot pepper. Other
favorites include Serrano, Cayen
ne, Habanera and Tabasco. Be
sure to use rubber gloves when
cutting or dicing hot peppers
because they can cause extreme
irritation to the skin. Be especially
carelul not to touch your face, par
ticularly the area around your
eyes, when you are working with
hot peppers.
It is important that salsas pro
cessed in a boiling water canncr
contain an acid ingredient such as
lemon juice or vinegar. Without
sufficient acid, the product has the
potential to support the growth of
Clostridium botulinum. Lemon
luicc often is the acid of choice
because it is more acidic and has
less effect on flavor than vinegar
It also adds vitamin C to the
recipe.
Here is a recipe for salsa that
you might want to try.
Chile Salsa
5 pounds tomatoes
2 pounds chile peppers
1 pound onions
1 cup vinegar (5%)

'A teaspoon pepper
Caution: Wear rubber gloves
while handling chiles; do not
touch your face or eyes and wash
hands thoroughly with soap and
water when finished. Wash and
dry chiles; slit each pepper on us
side to allow steam to escape.
Place chiles in 400° oven or boiler
for 6-8 minutes until skins blister.
Allow peppers lo cool. Place in a
pan and cover with a damp cloth
This will make peeling the pep
pers easier. After several minutes,
peel each pepper. Cool and slip oil
skins. Discard seeds and chop
peppers. Wash tomatoes and dip
m boiling water for 30-60 seconds
or until skins split. Dip in cold
water, slip off skins and remove
cores. Coarsely chop tomatoes
and combine with chopped pep-
pers, onions, and remaining ingre
dients in a large saucepan. Heat to
boiling; simmer 10 minutes. Fill
sterilized canning jars (pints),
leaving 'A inch headspace. Adjust
lids and process in boiling water
bath for 15 minutes. Yield: 6-8
pints.
