school started last week. They

large mall near our home and
again I am reminded that summer
is almost-gone.

He enjoyed playing with the pots
and pans in my cupboards. And,
when I cleaned my goldfish bowl,
he managed to reach in and catch
the fish that I think is about 20
years old. I have a feeling that the
fish is blind, but he manages to
find his food anyway.
Our daughter, Nancy, brough us
about two bushel of nice red
apples from her backyard in a sub
urb. They give me the prettiest
pink applesauce to freeze. We sent
potatoes, tomatoes, beans and can
taloupe home with her as we do
have an abundance of these things.
She tells me that she likes the basil
that I raise and she uses it for a
pcsto. This summer I have more
than I can use so I’ve given some
to neighbors too.
This year I have squash of every
shape and color. Only the butter
nut is true to form. You see, I
saved seed from last years crops
and apparently they cross
pollinated and now we can’t eat
some of them as they are stringy.

You probably can’t find a kitchen
in America that doesn’t have a jar
of mustard, catsup or pickles in
the refrigerator or on the shelf.
During the summer one or the
other of these condiments seems
to show up at practically every
meal. Summer meals, especially if
eaten outdoors, just don’t seem
complete without the relish cat
sup, etc.
Each year the Wayne County
Extension Office gets questions
about wheather these foods have
to be refrigerated. The question
comes up because people attend
picnics or parties where these
foods are left out on the table dur
ing the day. The acidity of these
condiments will slow down the
growth of bacteria and yeast
according to Dr. Gerald Kuhn,
Penn State food scientist. But he
cautions some molds can grow on

Therefore, Kuhn recommends
that once opened, catsup, mustard,
pickles, olives and relishes be
refrigerated. At picnics or other
outside events, they should not be
out of the cooler fra - more than two
hours. Be sure there is plenty of
ice in the cooler and keep the cool
er out of the sun.
Keeping these popular meal
additions on ice or in the refrigera
tor will ensure that they are safe to
eat. In addition you’ll find your
family and friends will appreciate
cool, crisp pickles and relishes and
cool, tightly capped mustard and
catsup. Play it safe with your food
this summer.
