Cook’s Question
Swlss-Style Mocha
V> cup instant coffee
Vt cup sugar
2 tablespoons cocoa
1 cup nonfat dry milk
Combine and store in airtight container. For one serv
ing, use 1 tablespoon plus 1 teaspoon of mix to 1 cup
boiling water. Makes 24 servings.

Cup Cheese
214 gallons thick sour milk
114 teaspoons baking soda
VA teaspoons salt
V» cup water
Heat milk to 120 degrees or until it is too hot to hold
your finger in it. Drain and allow to stand in cheesecloth
bag until the next day. Crumble curds or put them
through food processor until fine. Mix soda through
cheese and place into a crock or large mixing bowl. Cov
er with a cloth and allow to stand 3 days at room temper
ature. Stir each morning and evening. At the end of the
third day, the cheese should appear yellow and gummy,
and have a sharp odor.
Set crock or bowl containing cheese in a boiler of hot
water. Add salt and water, then stir until smooth. Pour
into custard cups. When cold, spread on bread.
1 gallon thick sour milk

% cup cream
% teaspoon baking soda
Scald milk to 120 degrees or until too hot to put finger
in it. Drain through a fine colander or cloth bag. Let stand
overnight to drain thoroughly.
Place into a crock or deep bowl and crumble until fine
Add salt and mix well.
Cover with a cloth and set to ripen at
room temperature for 3 days. Mix baking
soda into the cheese and let stand for
3 hours.

National Agriculture Week and
National Women in Agriculture

the beginning of spring when thou
sands of fanners across the country
are preparing their fields for plant
ing. The annual observance is
designed to direct attention to the
important contributions made by
the food and agriculture industry.
"For many Americans raised in
die city, agriculture is as mysteri
ous as a college level course in tri
gonometry," says Prater. "As a
result, we have to help the public
understand the challenges the
industry faces in continuing to
meet our food and fiber needs. We
also must make them aware of the
important stake they have in the
future of our food and agriculture
industry."

the farm. According to Porter, this
means that Americans don't have
to live on a farm to have their
livelihood depend on agriculture.
In fact, he says a large segment
of the population depends on agri
culture but have never been on a
farm.
"Not many people are really
aware of the connection they
see themselves as totally removed
from agriculture, not realizing that
their economic well-being as well
as their daily sustenance is inter
woven with our food and agricul
ture industry."
Porter is director of sales
branches at Deere & Company, a
farm implement manufacturer
based in Moline, 01. He is a board
member of the Agriculture Coun
cil of America (ACA), the national
coordinator of National Agricul
ture Day.
To mark National Agriculture
Day and National Agriculture
Week 1992, the fifth of a five-year
series of original oil paintings has
been created. "Sharing Our Finest"
is the title of this year's painting,
which depicts a farmers' market
Posters of the painting have been
produced and distributed by a
number of agricultural groups and
state departments of agriculture
across the country. In addition,
countless number of activities will
be held in conjunction with
National Agriculture Week and

In Lincoln, Neb., for example, a
special breakfast featuring state
agricultural products will be held.
Guests will be served food ranging
from beef jerky to soy-fried
donuts. And the York Area Cham
ber of Commerce will mark the
occasion by sponsoring an Ag Day
Exchange in which fanners and
ranchers exchange jobs for a day
with other area business people
and vice versa. What's more, all
state departments of agriculture
will generate official proclama
tions of Agriculture Day from the
nation's governors.
In Washington, D.C., a national
proclamation will be signed by the
President to show support for the
food and agriculture industry. In
addition, a reception will be held
on Capitol Hill to remind legisla
tors of the important role the indus
try plays in their state and national
economies.
ACA is a broad-based member
ship organization of farmers and
ranchers, local, state, and national
commodity organizations, agribu
sinesses and other interests that
work together to promote and
build support for the fodd and agri
culture industry.
