The ideal carcass will weigh between 600 to 800 pounds, it will be Choice quality grade, and have a Yield Grade of 2 or 3. Most steers will have a dressing percentage of 58 to 62. If a 1000-pound steer has a dressing percentage of 60, it will produce a carcass which weighs 600 pounds (1000 x .60 = 600). However, a 1,350-pound steer with a 62 per cent dress will weigh 837 pounds well above the ideal. The quality grade is determined by age or maturity of the steer and marbling (flecks of fat in the meat). Your steers should all be young enough that maturity is no problem. Most breeds will require at least 0.4 to 0.5 inches of fat cov er over the 12th rib for them to grade Choice. Yield Grade is determined by the amount of fat or waste, the size of the rib eye muscle, and the car cass weight. • Fat thickness over the rib eye muscle determines preliminary yield grades.
