PA Farm Women To Gather For Convention
HARRISBURG (Dauphin Co.)
—The Society of Farm Women of
Pennsylvania will meet for their
annual convention held during
Farm Show week.
The two-day convention will
convene at the State Forum on
Monday. January 8, at 10 a.m.
According to Arlene Whitman,
vice president of the state organi
zation, the theme is patriotic and
will focus on history. During the
afternoon session, Jean Moyer of
Mount Joy will portray Emma
Lazarus, the woman who wrote the
sonnet that appears on the Statue of
Liberty: “Give me your tired and
your poor."
For the Monday evening ban
quet held at the Penn Harris Motor
Inn, Pattee Miller, a social worker
from Reading will give an inspira
tional talk on “Using Our Given

County 4-H proudly announces
the 1990 York Countv 4-H
Ambassador Team which consists
of Tanya Barr. Kendra Miller and
•Carly Kelly The goal ot the
Ambassador program is to famil
iarize the public of the many
opportunities 4-H has to offer
youth between the ages of 7 and
19. Tanya, Kendra and Carly were
interviewed and chosen to repre
sent the York County program
based on their knowledge and
enthusiasm tor the 4-H program,
their public speaking ability, their
experience and participation in
local, county, state and national
activities and their winning
personality.
Tanya is a junior at Kennard-
Dale High School and is currendy
president of the Airville 4-H Club
and vice president of County
Council. She also was chosen as
the outstanding senior 4-H mem
ber this year. Tanya is involved
with the 4-H Seeing Eye Puppy
program in which a puppy is
trained in basic obedience and
then is returned to the program to
be placed with visually impaired
persons. She also volunteers her
time to the Saddle-Up Therapeutic
Horse Riding Program for hand
icapped youth. In school, Tanya is
involved in FFA, drama club, art
club and was a finalist in the Penn
sylvania’s Governor’s School for
the Arts.
Kendra is a senior at Dover
Area High School nine-year
veteran of 4-H. She is vice
president of the-Wellsville Bbots
Pattee Miller
and Saddles Horse and Pony Club
and secretary of Senior Exchange
Kendra has given demonstrations
since her first year in 4-H and was
able to travel to Michigan and
place first in a national compeu
tion with her demonstration
Kendra also won state competition
with the Junior Air Pistol Team. In
school, she is a member of the var
sity field hockey team, student
forum and was involved with the
school’s exchange program.
Carly is a sophomore and a six
year member of 4-H. Carly holds
offices in the .York County Lamb
Club, County Council and Wclls
ville Community Club. This past

CHICAGO, IL As the num
ber of new, ready-to-eat, ready-to
heat beef products increases, con
sumers will have convenience at
their fingertips. And with conve
nience, issues like product fresh
ness and stability attract the inter
ests of both the scientist and the
consumer.
In a checkoff-funded study,
researchers at Texas A & M Uni
versity may have found 3 new way
to solve the problems of bacterial
contamination, shelf stability and
product freshness. By using a sub
stance called sodium lactate, they
have been able to improve color,
flavor and freshness of cooked
roast beef products.

entertainment. The Tuesday
morning business session will
begin on Tuesday. January 9, at 9
a.m. in Room E of the State Farm
Show Building.
Members will elect a new state
secretary and two directors.
Members will vote also on the
following;
•whether or not to change the
annual two-day convention to a
one day convention.
•decide if county presidents
should vote at state board meet
ings. If county presidents are given
that opportunity, the state board
director positions would be elimi
nated as terms expire.

ficial programs of 4-H that she has
been involved with Carly has
completed projects in the areas of
cooking, stenciling, cross-stitch
and cake decorating. She is a
member of her school’s national
honor society and enjoys applying
what she leams in 4-H to her
school activities.

Sodium lactate is the salt of the
organic acid, lactic acid. Organic
acids are used in the meat industry
to control microbial growth on
carcasses and retail meats. But
little is known about the counter
part salts, like sodium lactate, and
their effects on cooked meat
products. ,
“Sodium lactate has been used
in .the bakery industry to decrease
stalcness in breadis and cakes,”
said Dr. Rhonda Miller, Texas A
& M University. “Its only use in
the meat industry presently is for
flavor enhancement and shelf-life 1
extension, primarily in poultry
products. But little is known about
how it might further enhance a
cooked beef product."
