Eggs To Be Refrigerated
The Pennsylvania Department
of Agriculture has proposed
amendments of regulations for
grading and marketing of eggs that
will require constant refrigeration
from the moment they are laid until
they are purchased by the consum
er. This is good news for Pennsyl
vania egg producers and packers
since eggs are One of the most
abused commodities at the whole
sale and retail levels. With the abil
ity of the Salmonella enteritidis
bacteria to multiply rapidly at
room temperature, it is imperative
that eggs no longer be treatede as if
they were not perishable.
Under the proposed regulations,
eggs would have to be cooled to an
internal temperature of 60 degrees
Fahrenheit within 10 hpurs of
being laid. Unfortunately, the reg
ulations also would require eggs to
be cooled to an internal tempera
ture of 45 degrees Fahrenheit with
in four hours of being packed in

have been placed on the Hazardous
Food List, but eggs are not on that
list.
Nonetheless, the FDA Bureau
of Chemistry is assuming that the
present S. enteritidis problem indi
cates that eggs should be regarded
as a hazardous food. However, this
is not consistent with FDA and the
technology does not presently
exist to meet the 45 degrees Fah
renheit requirement.
