The first thing that comes to Jeff
Burkholder’s mind when he thinks
of Thanksgiving is “Indians and
Pilgrims getting together to thank
almighty God for the blessings he
bestowed on them.” Added Jeff,
“Personally it’s a time to think of

1989. By 1990 it is estimated that
Americans will be eating an aver
age of 72 pounds of chicken each,
surpassing the consumption of
both beef and pork for the first
time.
The National Broiler Council
estimates that 58 percent of all
chicken produced in 1989 will
reach the consumer through retail
grocery stores. This compares to
70 percent in 1981. Big gainers as
chicken outlets are fast food
restaurants. In 1981 they
accounted for 22 percent of chick-
en production, compared to 32
percent estimated for this year.
Other restaurants will use 10 per
cent of chicken produced in 1989,
an increase of two percentage
points over 1981.
