Glorified Rice Ida Risser f
1 package strawberry flavored gelatin f
1% cups boiling water
I'A cups sugar This morning I opened an old
2 cups boiled rice „ well-kept family Bible. It has a
1 cup crushed pineapple
Vi cup whipped cream
Dissolve gelatin in boiling water. Add sugar. Chill until
liquid thickens. Beat until frothy and slightly firm. Add the „ -- . - , . _

™ 1 cup sugar
Glorified Rice Juice from % lemon
2 cups cooked dee.
1 cup pineapple, chunks
1 cup whipping cream
'A cup sugar
24 marshmallows, quartered
1 cup apples, chopped
Combine cooked rice, pineapple chunks, marshmal
lows, sugar and apples. Let stand one hour.
Whip cream and fold into mixture. May be garnished
with red raspberries or strawberries. Fresh peaches or
oranges may be used instead of pineapple. Serves 6.
Potato Kugei
6 potatoes, grated
1 onion, grated
2 tablespoons flour
2 eggs .
1 teaspoon salt
V* teaspoon pepper
3 tablespoons oil
Drain gratedpotatoes well. Mix in onions, flour, eggs
and seasoning. Mix well. Heat oil in pan at 400 degrees.
Pour mixture into pans. Sprinkle a little oil and paprika
on top. Bake for 1 hour or until lightly browned.

Noodle Cheese Kugel
1 pound noodles, cooked, rinsed and drained
4 egg yolks
Vs cup oil
1 teaspoon vanilla
4 egg whites
2 tablespoons sugar
Combine first eight ingredients and mix well. Beat
egg whites with 2 tablespoons sugar, until stiff. Fold into
noodle mixture. Butter large baking pan. Sprinkle with
bread crumbs. Pour in mixture and bake at 350 degrees
for 30 minutes or until top feels dry.
' Fancy Apple Kugel
12-15 Cortland apples, sliced
6 eggs, separated
'A cup oil .
1 teaspoon vanilla
1 tablespoon baking powder
2 cups sugar
2 cups flour
Bread crumbs combined with 1 teaspoon vanilla.
Grease 16x10 inch pan. Spread thin layer of crumb
mixture on bottom. Spread sliced apples on crumbs.
Beat egg whites until stiff. Add sugar, yolks in oil. Sift in
remaining dry ingredients and stir. Pour over sliced
apples. Bake for 1 to VA hours at 350 degrees. Serve
warm or cold.

opened it.
Inside are many newspaper
dippings of obituaries of rela
tives. Many of them are almost
100 years old. I do not think of our
family as having especially bad
luck and yet over such a long per
iod of time there were several
tragedies.
My grandfather was killed by a
train while he and his team were
crossing a railroad track in Lan
caster. My mother was fatherless
at five years of age. A great uncle
was killed in a cave-in as he
helped to build a bridge near
Ephrata. Another great, great
uncle was murdered by a hired
man who stole his money.
Now all of this is rather
depressing. But there arc many,
many .clippings which tell of
elderly relatives who died in their
own beds in their own homes.
Many are written up as esteemed
citizens of their communities.
Included in the collection of
items in this old Bible are wide
ribbons with poems printed on
them. There arc notices of funerals
printed on heavy cardboard with
black edges. There is even a place
for photographs in the back of the
big old Bible.
What we have to realize is that
someday, we too will just have a
tiny newspaper clipping to be
remembered by. We’ll be lucky if
someone reads it SO years later
and sheds a tear for us.
Enough of such morbid
thoughts. I’m headed for my gar
den where the weeds grow pro
fusely in this wet season. Soon
there will be raspberries to pick
and the sun will shinc-we hope.
