ANSWER Ruth Cantello, Somerset, N.J.,
requested recipes using honey for both entrees and
desserts. Thanks to Anna Martin of Reinholds and
Nadine Poliak for sending in theirs.
1 cup honey
Vi cup soy sauce
2 tablespoons oil
2 tablespoons catsup
V 2 clove garlic, chopped
3 pounds chicken wings, drumsticks and thighs also
can be used
Sprinkle chicken wittv-salt and pepper. Mix all ingre
dients and pour over chicken. Bake one hour at 350
degrees.
% cup melted butter
Vi cup honey
% cup mustard
3 tablespoons lemon juice
V/i teaspoons paprika
1 2Vt - to 3-pound chicken, cut up and skinned
Salt, pepper to taste
Combine butter, honey, mustard, and paprika, stir
ring well. Lightly sprinkle chicken with salt and pepper.
Place chicken, meaty side down, in a lightly greased
12x8x2-inch glass baking dish. Pour honey mixture over
chicken, cover dish and refrigerate 3 to 4 hours.
Remove chicken from refrigerator; bake covered at
325 degrees for 30 minutes. Remove cover and turn
chicken. Bake 30 minutes basting occasionally.

Lebanon Bologna
25 pounds ground beef
1 pint hot lard
1 pound salt
1 pound brown sugar
3 tablespoons pepper
1 ounce salt petre dissolved in hot water
Cut meat, ready to grirtd
Let drain four days. Grind twice; season

legal aspects of owning and run
ning a home business? If you can
say no to either of these questions,
then the “Home Based Business
Workshop” being offered by the
Penn State Extension Service in
York County may be for you.
The workshop will be offered
Tuesday, March 21, in the confer
ence center of the administration
building at Penn State University
York Campus. Registration with
coffee and pastry will begin at
9:30 a.m.
At 10:00 a.m. the workshop.
Developing a Business Plan for
Your Home Business, will be pre
sented by Benjamin B. Stigelman,
an outreach consultant for the
Pennsylvania State University at
Harrisburg Small Business Deve
lopment Center. Mr. Stigelman
received his B.A. in Government
and Public Administration and his
M.B.A. in Marketing and Finance
from The American University,
Washington, DC. His experience
includes corporate planner and
market research analyst for
American Glean Tile Co., Vice
President and Director of Market
ing Research for Hamilton Bank,
and at the present, president of the
American Needlework Company.
He will provide various forms of
business plans and discuss the
importance they play in establish
ing a business.
Following a buffet lunch, John
C. Becker, Esquire and Associate
Professor Agriculture Economics,
Penn State University will present
information for the home business
on a business name and licensing,
legal composition, how to deal
with local, state and federal reg
ulations, liability and insurance,
zoning and contracts. Time will be
available for questions after and
during both presentations. The
program should conclude at 3:00
p.m.

required and attendance is limited.
