ers for pounds of lean, high-quality
pork muscle, according to Ray
Hankes, National Pork Producers
Council president and task force
chairman.
Composed of 15 pork producers
and industry representatives, the
task force was created at the direc
tion of producer delegates at
NPPC’s annual meeting held in
Nashville, Tenn., last March.
During its first meeting in late
July, task force members dis
cussed plans to develop a Carcass
Merit Buying Guide so that a lar
ger number of producers would be
paid on the basis of the quality of
lean meat.
According to a recently com
pleted study, between 28 and 38
percent of the nation’s hogs arc
currently being purchased under a
carcass merit system. While this
represents a doubling since 1984,
producers and other industry rep
resentatives feel that there is still
much progress to be made m this
area.
Research currently being con
ducted by Purdue University,
assisted by NPPC funding, is eva
luating several different pork grad
ing systems and methods.
Researchers are going beyond car
cass grading at the packer/
processor level and looking at
developing quick and accurate
methods of carcass worth based on
the value of retail pork cuts.
