floured board and shape into rolls or into 3 small loaves.
Place in greased pans. Cover and let rise again in warm
place until doubled in bulk, about 45 minutes. Bake
loaves 20 minutes at 400 degrees. Reduce heat to mod
erate 350 degree oven and bake 20 minutes longer.
Serve rolls hot, but cool loaves before slicing. Makes
about 2 dozen rolls or 3 small loaves. Bake rolls 15 to 20
minutes at 400 degrees.
White Bread
2 tablespoons yeast
'A cup warm water
2 tablespoons salt
tVi cups cold water
V% cup sugar
'A cup shortening
2 cups hot milk
5 cups bread flour
5 cups hi-gluten flour
Soften yeast in warm water for sto 10 minutes. Set
aside, undisturbed.
In mixing bowl, combine sugar, shortening, salt and
milk. Stir to dissolve melted shortening. Cool to lukew-

Add softened yeast to lukewarm mixture. Mix well.
Gradually add flour, alternating the two kinds. (If hi
gluten flour is unavailable, use all bread flour).
Knead dough on a floured surface until smooth and
satiny, about 5 to 7 minutes.
Place dough in a large greased bowl. Turn dough to
grease all sides. Cover. Let rise in a warm place until
doubled in size, about 2 hours.
With fist, punch down dough in center. Fold sides into
center. Turn upside down in bowl. Cover. Let rise again
for 30 minutes.
Divide dough into 4 equal parts. Place in a group on a
lightly floured surface. Cover with large inverted bowl.
Leave covered for 15 minutes.
Shape each part into a loaf. To shape: roll out an
equal part on a floured surface, with a rolling pin, to a
14x7-inch rectangle. Starting at narrow end roll up tight
ly. Seal ends by lightly stretching top layer over ends to
the bottom of the roll.
Place in greased 9xsx2 3 A -inch loaf pans. Cover with
lightweight tea towel. Let rise in warm place for about
I V2 hours.
Bake in preheated 350 degree oven for 17 to 19
minutes. Remove loaves from pans immediately on to
cooling rack. Brush tops of loaves with melted butter.
Cool thoroughly. The bread freezes well if placed in
freezer as soon as it is cool.
