Some For Winter Meals
A look at fall produce stands
shows us that fall has arrived. Two
of my favorite fall vegetables are
now in plentiful supply - broccoli
and cauliflower.
The oldest record of these two
vegetables dates back to the sixth
century B.C. Cauliflower was
found on the London vegetable
market as early as 1619 and has
been grown for about 200 years in
the United States.
Like broccoli, cauliflower did
not become a popular vegetable in
this country until the last 40 to 45
years. During this time they have
become increasingly popular

Freezing gives you a much bet
ter product than canning when it
comes to preserving these two veg
etables for eating during the com
ing winter months.
How To Freeze Broccoli.
Select dark green, compact heads.
Wash and remove leaves and
woody portions. Wash again. Cut
into VA florets. Blanch in salt
water (four teaspoons per gallon)
for 3 minutes. Or, steam blanch for
5 minutes. Place in ice water for
same amount of time. Drain. Pack-

How To Freeze Cauliflower,
Choose creamy compact heads
that have fresh green outer leaves.
Spotting on the white curd indi
cates that the cauliflower is not as
fresh as it might be. Trim away the
outer leaves. Break into florets of
uniform size, about 1- to 2-inch
pieces; wash carefully and drain.
Prepare and package the same as
broccoli.
Pickled Cauliflower
12 cups of 1- to 2-inch caulif
lower florets
4 cups while vinegar (5%)
2 cups sugar
2 cups thinly sliced onion
1 cup diced sweet red pepper
2 tablespoons mustard seed
1 tablespoon celery seed
1 teaspoon turmeric
Yield: About 9 half-pints
Wash cauliflower florets and
blanch in salt water (4 teaspoons
canning salt per gallon of water)
for 3 minutes. Cool and drain.
Combine vinegar, sugar, onion,
diced red pepper, and spices in
large saucepan. Bring to a boil and
simmer 10 minutes or until vege
tables are tender-crisp. Distribute
onion and diced pepper among
jars; pack cauliflower in jars to
within ‘/j inch of top. Add boiling
syrup to cover, leaving 'A -inch
