Pennsylvania plants manufactured
90.3 million gallons of ice cream
during 1987, up 2 percent from
1986, maintaining the state’s sec
ond place national ranking in total
ice cream production. California
was the leading ice cream produc
ing state with a total production of
108.3 million gallons.
Ice milk production in Pennsyl
vania during 1987 totaled 17.7
million gallons, up 10 percent
from 1986. Milk sherbet produc
tion at 3.7 million gallons was up 7
percent from the previous year.
Other frozen products totaled 0.7
million gallons, half of the produc
tion in 1986.
Dairy plants in Pennsylvania
produced 57.2 million pounds of
butter during 1987, down 16 per
cent from 1986. Creamed cottage
cheese production at 37.8 million
pounds was up 11 percent, and
curd cottage cheese production at
42.8 million pounds was up 10 per
cent from the previous year.
Production of cheese, excluding
cottage cheese, totaled 223.3 mil
lion pounds in 1987, a 2 percent
decrease from the previous year.
Mozzarella production at 134.3
million pounds was up 3 percent
from 1986 while production of
other types of Italian cheeses at
37.6 million pounds was up 2 per
ccnte. Swiss Cheese production in
1987 was 5.8 million pounds,
down 30 percent from the previous
year.
During 1987, a total of 3.98 bil
lion pounds of whole milk (equi
valent) was used in manufactured
dairy products in Pennsylvania
with 32 percent used for the pro
duction of butter and 35 percent for
frozen products.
