SUBSTITUTE FOR MEAT
DURING LENT
If you’re looking for a nutritious
substitute for meat during Lent, try
lentils. Combined with a grain,
they are a good source of protein
for anyone who is not eating meat
Proteins are made up of amino
acids. There are 21 amino acids,
but eight of them are essential,
meaning our bodies cannot manu
facture them from other sources.
Meats have all of the essential
amino acids. Other foods, such as
cereals, breads, beans, peas and
lentils, are incomplete proteins
since they only have some of the
essential amino acids.
But, these foods can be put
together like a jigsaw puzzle to
give you all the amino acids you
need to make a complete protein.
These foods, when put together,
are called complementary
proteins.
Lentils and rice or whole wheat
make a delicious complementary
protein that can be substituted for
meat if you’re looking for some
thing different to eat during Lent
For something unusual, try a
spaghetti sauce made from lentils
and served over whole wheat
spaghetti.
Lentil Spaghetti
Sauce
2 tablespoons oil
3 small onions, chopped
3 cloves garlic, minced
3 cups tomato sauce
6 cups water
1-/4 cups lentils
1-/4 teaspoons salt
l-!4 teaspoons oregano
l-A teaspoons thyme
3 teaspoons basil
A teaspoon tobasco sauce
Spaghetti
Grated cheese, if desired

In oil, saute onions and garlic.
Add other ingredients. Cover and
simmer 45 minutes. Serve over
spaghetti. Top with grated cheese,
if desired. Serves 6.
MAKE THE MOST
OF YOUR AUTOMATIC
DISHWASHER
Your automatic dishwasher
brings you a welcome release from
one of the most disliked jobs in the
kitchen. It will serve you faithfully
any time of the day or night at a
cost of only pennies a load. All it
asks is understanding, care and
proper feeding of detergents speci
fically designed for its digestion.
Like all modem automatic
appliances, it has been scientifical
ly engineered to perform in a cer
tain way. Be sure to follow the
manufacturer’s suggestions.
Preparation- Scrape dishes to
remove large food particles or
rinse quickly under running water.
Remember your machine is not a
garbage disposal.
Place cups and glasses open end
down; the inside surface should
face toward the spray of water.
Place silverware in the silverware
basket. Do not crowd silverware.
Use only a detergent especially
made for automatic dishwashing.
Fill the detergent cup or cups
according to manufacturer’s direc
tions. Never sprinkle detergent
directly on any item. Do not use
soap powders, liquid or laundry
detergents. They create suds which
block the washing action. They
may cause the dishwasher to over
flow and damage the motor or your
floors. They also have a scum
which rinsing cannot remove.
Water Temperature- For max
imum efficiency, your machine
should have a water temperature of
140-160 degrees. Set your hot
water heater at 160 degrees F.
