Penn State’s Creamery. For the
past four years he was production
supervisor for the Safeway Milk
Plant in Denver, Colorado, which
is part of Safeway Stores.
The University Creamery is the
largest university creamery in the
country. As part of the Department
of Food Science, it serves the
whole University by producing
dairy products for the residence

Guy, chairman of Maryland’s
Agricultural Land Preservation
Foundation, recently presented
citations from the secretary of
agriculture to Senator and former
State Treasurer William S. James
and Sen. James Clark, Jr. in honor
of their years of support and
dedication to Maryland’s out
standing Agland Preservation
Program.
Leading the nation in the number
of agricultural acres preserved for
future generations, Maryland
boasts perpetual easements on
48,725 acres purchased at a cost of
$40,000,000. This award winning
program was initially conceived
and introduced to the legislature
by a senate joint resolution
presented by Sens. James and
Boyer in 1973.
The resolution called for a study
of agricultural land preservation
conducted by a task force of which

products. Quality control has
always been a big issue with me,”
Palchak says. He plans to improve
on a good thing by purchasing a
new high-temperature, short-time
pasteurizing unit and refurbishing

The awards, presented at the
regular meeting of the
Agricultural Land Preservation
Foundation at the Maryland
Department of Agriculture,
recognized the “distinguished, life
long dedication to the people of
Maryland and abiding interest and
support of the Agricultural Land
Preservation Program” of both
men.
William Guy, chairman of the
Foundation, echoed the sentiments
of all present when he said, “These
are only tokens of the esteem in
which we hold your ac
complishments. Between you, you
have invested 70 years in malting
Maryland a better place to live,”
Guy continued. “It is difficult to
sufficiently honor those who have
already become legends in then
own time.”

of Physical Plant to remodel the
processing rooms.
“Now that the Creamery is part
of the department, I hope to bring
more students in to receive hands
on training with a full scale, state
inspected milk plant. I also enjoy
working with student clubs such as
the Dairy Science Club during
their annual fund raising project of
selling gift boxes of Penn State
cheeses. We’re always happy to
have visitors and frequently give
tours to University guests, visiting
professionals in the industry and
the media,” he continues.
Until this winter, the Creamery
was an auxiliary enterprise of
Penn State and is now an academic

Palchak is not new to Penn State.
A 1900 graduate in Food Science,
be says the Creamery has been
part of his education. “In fact, I
even knew about the creamery
before I came to Penn State. I
worked at a milk cooperative
testing laboratory the summer
before going to college and learned
about food science and, of course,
the Creamery,” says Palchak.
After receiving his degree,
Palchak accepted a position as
production supervisor trainee for
the Safeway Milk Plant in Lan
dover, Maryland.
