Turkey Leftovers Are Great!
One of the nice things about that
big .Thanksgiving turkey is all the
leftovers! There are so many ways
to use the cooked meat in your
microwave.
Hot turkey sandwiches, with or
without the gravy, are delicious.
For best results in the microwave,
heat the gravy on high first until it
is hot. Then warm the sliced meat
on medium power (50,5) so it
doesn’t get dried out or tough.
When the meat is warm,
assemble the sandwich, and
microwave for about 20 seconds
each on high power. If you put the
sandwich together cold, then try to
heat it all together, the bread or
rolls will be rubbery or hard by the
time the meat is hot.
If you are tired of turkey right
now, cube the meat and freeze it in
two-cup quantities. Then use it in
one of these quick casseroles some
day next month when you’re worn
out from holiday shopping. You’ll
have your dinner half done before
you start!

peas and carrots. Use skim milk
instead of the half and halL to
reduce the fats and calories.
.Turkey Tetrazzini
4 ounces thin spaghetti
2 tablespoons margarine or
butter
1 medium onion, chopped
1 cup sliced fresh mushrooms,
optional
cup flour
V 2 teaspoon salt
V 4 teaspoon paprika
1 cup turkey broth (or use 1
chicken bouillon cube and 1 cup
water)
1 cup half and half or milk
2 cups chopped cooked turkey
1 4 cup sliced ripe olives, optional
cup grated Parmesan cheese
1. Break uncooked spaghetti into
pieces, then cook conventionally.
2. Combine margarine, onion
and mushrooms in a 2-quart
casserole. Microwave on high for 3
to 4 minutes, stirring once, until
the onion is tender.
3. Stir in flour, salt and paprika.
Then slowly stir in broth and half

Tip; If using a package of frozen
vegetables, microwave them on
high (right in the box) for 5 to 6
minutes until almost cooked before
adding to the casserole.
Cook rice conventionally while

1 green pepper, cut in V4-inch
strips

II bounce can pineapple chunks
IV2 tablespoons cornstarch
1 tablespoon brown sugar
2 teaspoons vinegar
2 tablespoons soy sauce
1 can sliced water chestnuts
2 cups cubed, cooked turkey
1. Put pepper in a 2-quart
casserole and dribble oil over,
tossing to coat. Cover and
microwave on high for 2 minutes
until partly cooked.
2. Drain pineapple chunks,
reserving juice in a 2-cup measure.
Set pineapple chunks aside. If
needed, add water to juice to make
3 /4 cup liquid. Stir vinegar and soy
sauce into juice. In a small bowl,
combine sugar and cornstarch,
then stir into pineapple juice.
