"Avocados are highly nutritious.
Combined with the protein in eggs,
the salad is highly nutritious,”
Mrs. Urzen said.
The Avocado Egg Salad can be
served individually on lettuce
leaves on salad plates or in sand
wiches, Mrs. Urzen said. For
sandwiches, she suggests slicing
round rolls in half, removing most
of the bread within and filling the
cavities with the salad. For a
buffet, allow guests to spread the
salad on thinly sliced French
bread.
Mrs. Urzen said she spent about
six months developing and per
fecting her easy-to-assemble
recipe. She said this is the first
state-wide recipe contest she has
entered.
Other finalists competing
