Cook’s Question Corner
Preheat oven to 325° F. Grease 2 loaf pans. Prepare a
strong cup of coffee with 3 teaspoons instant coffee and 1
cup water. Set aside to cool. Separate the eggs. Put the
yolks in a mixing bowl and beat with sugar until creamy.
Add the oil, then the honey, beating after each addition.
Beat until mixture is smooth and creamy.
Sift the flour and measure 3 cups. Combine with salt,
baking powder, soda and spices. Add the dry ingredients
to the egg/honey mixture alternately with the coffee. Stir
with a spatula until well blended. Do not overmix.
With clean beaters, whip the egg whites until stiff and
they hold peaks. Add Va at a time to the batter. Fold in
gently until the batter is smooth. Pour into greased pans
and bake 40 to 50 minutes. This cake improves with age,
so bake a few days ahead.

Jelio Swirled Bundt Cake
1 package yellow cake mix V* cup water
1 cup sour cream 2 eggs
1 3-ounce package gelatin (raspberry, cherry, lime or
strawberry)
Combine cake mix, sour cream, water and eggs in large
bowl. Blend, then beat at medium speed 2 minutes until
creamy Spoon l A of batter into well-greased, floured 10-
mch fluted bundt pan. Sprinkle with half the gelatin

cover Bake at 350° F. for 45 to 50 minutes. Cool in rack.
Sprinkle with confectioner’s sugar if desired.
Pumpkin Bundt Cake
1 package yellow cake mix
2 eggs

2 teaspoons baking soda
116-ounce can pumpkin
2 teaspoons pumpkin pie spice
Grease and flour bundt pan or 13x9-mch pan. Blend all
ingredients in large mixer bowl. Beat 4 minutes on
medium speed. Pour batter into pan. Bake at 350° F. for
40 to 45 minutes. Cool 10 minutes, remove from pan.
