be explosion-puff dried
by a government
patented process,stored
for over a year, then
restored with high
flavor and texture for
cooking. The process
has the potential of
expanding mushroom
exports and U.S. sales.
Conventional drying
methods that can leave
mushrooms too chewy,
and with off-flavors,
have been unacceptable
to the U.S. mushroom
industry. The puff dried
mushroom is also an
appealing snack or
crouton light,
crunchy with con
centrated flavor.

Sour rot the most
pernicious destroyer of
tomatoes after ripening
can be controlled by a
chemical known to
check sour rot in citrus.
Sour rot is caused by
Geotrichum candidum,
a pathogen that also
attacks harvested
carrots, cucumbers,
and peaches and makes
they decay. Dipping
tomatoes in the ex
perimental fungicide
guazatine takes only 20
to 30 seconds, yet cuts
the incidence of sour rot
to about 5% compared
to 50% in untreated
tomatoes. Fungicide
treatment would benefit
growers, shippers, and
retailers as well as
consumers of fruits and
vegetables.
