Faozen Seafood
Consider frozen seafood when
you are looking for a quick main
dish for dinner. Most frozen
seafood can be cooked without
defrosting by increasing the
cooking time to about twice the
time recommended by thawed or
fresh seafood products.
If the entree you are preparing
calls for fish to be stuffed, breaded
or cooked with a sauce, you should
thaw it first. Proper defrosting will
lock in the quality and flavor
preserved by freezing fish.
For best results, thaw seafood by
one of the following methods.
Defrost it in your refrigerator
overnight. Large, whole fish may
take longer. You can also thaw the
seafood under cold running water,
allowing one-half hour per pound of
frozen fish.
Keep the seafood in its original
wrapped until thawed. Do not
defrost it in warm water or at room
temperature because the thinner
edges will thaw more quickly than
the thick parts and may spoil
before the entire piece is defrosted.
Cook seafood soon after
defrosting, preferably within two
days, never refreeze. Breaded or
battered seafood products should
not be defrosted before cooking.

machine is more than a tool that
takes the tedium out of hand
knitting. Even the most simple
model rapidly produces a more
precise, finer knitted fabric in
greater quantities than is possible
for a person working with two
needles.
The term “machine” is
misleading; the home knitting
machine is more like a handloom
that holds many yam ends in order
and under tension.
There are variety of models
available from the simplest, which
makes a stockinette stitch, to a
computerized wonder, that can
knit a fabric design sketched on a
piece of paper fed into its built-in
scanner. The prices range from
around $lOO to several thousands of
dollars.
Hand knitting or weaving ex
perience is not necessary to
operate a knitting machine, but it
is helpful in understanding the
basic techniques. Always ask for a
demonstration, and a chance td try
the machine yourself. Never order
a knitting machine or any other
kind of equipment without a hands
on trial.
Knitting machines are
distributed through independent
dealers, and it is not always easy to
find information or observe a
demonstrr on. Try yam shops,
retail fabric stores, or the Yellow
Pages for names of dealers.
The most popular newsstand
knitting magazines carry articles
on knitting machine classes or
workshops. If you know of others
who are interested, ask a yam or
craft shop owner to sponsor a
manufacturer’s seminar. Contact
a local crafts guild to find other
machine knitters.
Machine knitting can be fun,
creative, and profitable. It is not a
common craft and finding the
information to make a sound
decision may be a challenge.
Remember you are making an
investment of your time and
money, make your decision based
on reliable information, hands-on
experience, and a careful survey of
your individual needs and goals.
