And Christmas isn’t noted for sedateness. Be prepared. Know how to cope with some of the more common holiday time accidents. If alcohol, beer or mixed drinks end up somewhere other than in the glass, blot up the excess with clean absorbent cloth or paper toweling. Sponge lightly with cool water; blot well. Apply upholstery shampoo with a soft brush. Let the area dry thoroughly. Repeat if necessary. For sauces, soft drinks, salad dressings or blood—blot up excess. Then blot with cold (never hot or soapy) water. Mix a weak solution of three teaspoons of ammonia to one quart cold water and blot the stained area again. Blot with cold water. If the stain remains, moisten it with white vinegar; blot thoroughly. You get the point; blot, don’t rub. Fruit, fruit juices and berry stains also call for blotting action. But first scrape off any excess with the dull side of a knife. Then blot with clean toweling to remove excess liquid. Blot with cool water. If the stain is still visible, blot with a cool detergent to which you’ve added a few drops white vinegar. Lightly sponge with clear water to remove any traces of vinegar. If you received chocolates for Christmas and want to portion out the goodies past the holiday season, here are some tips on how to store chocolate. Chocolate can be stored suc cessfully because the cocoa butter in chocolate is a stable fat and keeps for years at room tem perature. It’s the cocoa fat in chocolate that makes it melt in your mouth, unlocking the taste. But this same cocoa fat can also cause chocolate to “bloom.” When exposed to high temperatures, the cocoa butter will melt and rise to the surface. When the chocolate rehardens, a gray film on the surface remains. This is called “bloom.” Chocolate with “bloom” is perfectly safe to eat, but it may not be as creamy as when it was bought fresh. To get the full benefit from chocolate, follow these simple rules. -Keep chocolate away from moisture. -Do not refrigerate or freeze chocolate. When chocolate warms, or is defrosted, moisture may form on the surface and cause “bloom”. -Store chocolate between 60 s to 70°F and about 50 percent humidity. -In hot weather, keep chocolate in a cool place. When stored at over 80°F, milk chocolate will begin to soften; and at over 85°F, it will begin to melt.
