ORANGE FRUITCAKE
2*2 cups cake flour
1 teaspoon baking powder
>2 teaspoon salt
1 2 cup pitted chopped dates
‘2 cup glacied fruits
m cups chopped walnuts
1 teaspoon grated orange peel
1 cup butter, softened
1 cup granulated sugar
2 eggs
1 cup buttermilk
1 teaspoon baking soda
1 teaspoon vanilla extract
Glaze
‘a cup orange juice
1 cup sugar
Preheat oven to 300°F. Grease a
10-inch tube pan. Sift flour, baking
powder and salt together. Combine
fruits, orange peel and nuts. Stir
several tablespoons flour mixture
into fruit mixture. Cream butter
until smooth. Gradually add 1 cup
sugar. Beat in eggs one at a time,
beating well after each addition.
Stir baking soda into buttermilk,
add to creamed mixture alter
nately with the flour mixture. Stir
in vanilla and fruit mixture,
blending well. Pour into pan, bake
for 55 to 60 minutes or until cake
tests done.
Invert cake onto rack to cool.
For glaze, combine sugar and
orange juice in small saucepan and
bring to boil. Pour over cake.

* 4 cup diced {Simientos, 1-inch dice
Place broccoli in steamer insert;
add dash of salt and set insert into
saucepan containing boiling water.
Cover pan and steam broccoli until
tender-crisp, about 5 to 6 minutes.
Transfer broccoli to bowl, being
careful not to break florets, and set
aside.
Repeat procedure with
cauliflower, steaming 4 to 5
minutes.
Preheat oven to 300°F. Spray a
l v 2-quart ovenproof bowl with
nonstick cooking spray. Place a
circle of broccoli florets, stem-side
up, in center of bowl and push
tightly together; arrange a few
pieces of puniento between the
florets. Arrange some of the
cauliflower florets around broc
coli, covering the bottom of the
bowl; place a few pimiento pieces
between cauliflower florets. Cover
vegetables in bowl with remaining
broccoli florets, pressing down
slightly; place pimiento pieces
between the florets at the outer
edge. Repeat with remaining
cauliflower.
Cut a piece of wax paper into a
circle the same size as bowl; spray
with nonstick cooking spray. Set
bowl into a shallow pan, cover with
paper circle and weight paper with
a plate that fits snuggly into the
bowl. Pour enough boiling water
into the pan to reach halfway up
the sides of bowl. Carefully
transfer pan to oven and bake for
20 minutes. Remove bowl from
water, remove plate and paper and
unmold onto a round serving
platter.

Test for open house visitors.
The Ephrata Young Farmers have supported the program for the past several years,
and this year's donation will provide a year's supply of feed for one of the program's
horses.
Program participants receive physical therapy by riding and performing various
exercises on the horses.
