Use up ell those Easter eggs
What are you gomg to do with
your leftover Easter eggs on
Monday? If the Easter bunny left
you lots of hard boiled eggs to hunt,
will you be eating egg salad, egg
salad, and more egg salad? Not
necessarily! Use your microwave
and these recipes to add a little
variety to your meals last week!
Creamed eggs on toast are fast
and easy to make for breakfast.
The Easter Egg Casserole is a
protein packed dish to accompany
hot dogs, or for a vegetarian meal.
Either recipe would be good served
with a salad for a light lunch or
supper.
If you don’t have any left over
hard boiled eggs, Don’t try to boil
them in your microwave in their
shells, they may explode! You can,
however, hard cook them without
their shells when you need eggs for
chopping or salads.
To Hard Cook Eggs:

(if it doesn’t have steam vent-holes
in the bottom!). Poke a hole in
each yolk with a toothpick or sharp
knife. This breaks the membrane
surrounding the yolk, so it won’t
explode.
Cover tightly with plastic wrap
and cook for 45-60 seconds per egg
on medium power, (50,5). You
could use high power for 30 seconds
each, but the eggs sometimes get
rubbery (overcooked) on the
edges.
In a microwave, the yolks cook
faster than the whites because they
have a higher fat content. After
microwaving, let the eggs stand,
covered, about 5 minutes for the
whites to finish cooking. Cool and
chop.
This layered casserole takes a
while to put together, but can be
made ahead of tune. For break
fast, make it with bacon (see Tips,
below) and refrigerate overnight.

1 tablespoon margarine or butter
4 hard cooked eggs, chopped
1 Jar (4 ounces) sliced pumento or
mushrooms, drained, optional
1 cup shredded cheddar cheese (4
ounces)
1 cup bland cracker crumbs, such
as saltines, Ritz, etc.
IVfe cups milk
3 tablespoons margarine
4 tablespoons flour
Vi teaspoon salt, omit or reduce
salt if crackers are salty.
V« teaspoon dry mustard
Topping:
2 tablespoons margarine or butter

1. Saute celery, onion and one
tablespoon margarine in an 8-9-
inch square or round glass dish for
four minutes on high until tender.
Stir once after two minutes.
Remove half of the vegetables to a
small bowl and spread the
remainder evenly in the dish. *
2. Make a thick white sauce ui a
4-cup measure as follows: Melt 3
tablespoons margarine on high for
1 minute. Stir in flour, salt,
mustard until smooth. Then slowly
add milk, stirring until smooth
Cook for 2 minutes on high. Stir in

the pimiento or mushrooms, and

4. Melt 2 tablespoons margarine
in a 2-cup mea. in ■. or small bowl
(microwave tor 30-45 seconds on
high). Stir in Vfe cup cracker
crumbs and cook on high for 2-3
minutes, stirring each minute until
the crumbs are browned. Sprinkle
over the top of the casserole.
5. Cook casserole, uncovered, for
10-12 minutes on medium high
(70,7) until heated through. Let
stand, covered, 5 minutes before
serving. Makes 4 main dish ser
vings, or 6-8 as a side dish.
- TIPS:
--Replace pimiento or
mushrooms with bacon; Cook 4
slices bacon in 8” square dish for 4
minutes on high. Remove bacon,
drain and crumble. Saute
vegetables in one tablespoon bacon
fat instead of using butter or
margarine, in Step 1 above.
-To make ahead, prepare
through Step 3, cover with plastic
wrap and refrigerate. In Step 4,
brown cracker crumbs, but do not
sprinkle on top of casserole. To
heat for serving; Cook on medium
high (70,7), covered with plastic
wrap for 10 minutes. Remove
cover, sprinkle crumbs over top
and cook uncovered on medium
high (70,7) for 5 minutes longer,
until heated through.
Creamed eggs on toast can be
whipped up in less than 10 minutes
in your microwave. Add
mushrooms for a gourmet feast
and flavor treat.

Dash Tabasco sauce or white
pepper
1 cup milk
3 hard cooked eggs, peeled and
slice or chopped
Toast (make in toaster, you can’t
make toast in the microwave!)
1. Put margarine and
mushrooms in a one-quart
casserole dish. (If not using
mushrooms, just melt margarine.)
Microwave on high for 3 minutes,
stirring once halfway through. Stir
in flour, salt and tabasco or pep
per. Slowly stir in milk, stirring
until smooth.
2. Microwave on high, un
covered, for \Vz minutes, stir well.
Microwave on high for 2 minutes
longer, stirring each minute until
cream sauce boils and thickens.
3. Add eggs, stirring gently to
mix. Microwave on medium (50,5)
for about 2 minutes until heated
through. (Use defrost (30,3) for
about 3 minutes if your oven
doesn’t have medium power.)
Serve hot over toast. Makes 2-3
servings.
TIP; To double recipe, double
the ingredients, the cooking tunes,
and use a 2-quart casserole.
NOTE: The cooking times above
are for microwaves with 600-700
watts of cooking power. For 500-600
W, add 10 seconds to each minute;
for 400-500 watts, add 20 seconds to
each minute.
