From the distance of the kitchen
window to the back yard, they
appear as mere yellow or creamy
colored blotches.
A brisk wind sweeps down across
the patchy green grass, sending
the vague yellow shapes bobbing in
its wake. Even from the distance, I
can see the bright shapes leaning
away from the prevailing breeze,
turning their backs to the oc
casional harshness of a fickle
season.
But, up close, perfect droplets of
dew sparkle on the crisp, ballerina
skirt blossoms. It has always
seemed so perfectly fitting that
Easter and the unfolding of the
daffodils should coincide.
With heavy rains in the
forecasts, I carefully pluck a
handful of these brave, cheerful
bloomers, and arrange them
casually in a pewter pitcher with
sassy, straight pussywillow and
tendrils of graceful weeping
willow.
How exquisitely beautiful they
are, their six perfect oval outside
petals framing the cup-shaped,
ruffled centers. In contrast are a
few less familiar creamy whites,
with shallow, heavily-crimped
centers, like pleated skirts twirling
around in exuberant dancing.
How unimpressive they seemed
last fall, those pudgy, plain bulbs,
wrapped m brown parchment-like
skins. Imagine, trying to convince
someone unfamiliar with the ways
of bulbs that these tear-drop
shaped, fleshy objects would bring
forth blooms of the utmost beauty,
after being buned for months in
chilled soil blanketed with snow
and ice.
By gosh, it takes a kind of faith to
plant bulbs.
But such a perfect example they
are of the Resurrection we now
celebrate. We know it happens. We
expect that the bulb, in due time,
will sprout forth slender green
leaves and then burst into
breathtaking lovelmess-and yet
each time it seems a miracle all
over again.
Just like the Easter story itself.
May your Easter be blessed
again with the joy of the
Resurrection. And daffodils.

Pennsylvania Beef Cook-Off, set
for June 10 at Trinity Area High
School in Sturemanstown. Ten
finalists will be asked to prepare
their award-winning dishes for a
panel of judges and the moment of
truth. Four cash prizes will be
presented: $125 first, $75 second,
and $5O each for third and fourth
place finishers.
The “Best Beef” will represent
Pennsylvania at the National Beef
Cook-Off, Sept. 24-26 in Wichita,
Kansas. Prizes at the national
level are: $5,000 first, $2,500
second, $l,OOO third, and five $3OO
honorable mention awards.
Any recipe using the following,
in any form, may be entered: beef
chuck, round, rump, fresh brisket,
plate, shank or ground beef. All
recipes must contain a minimum
of one and not more than five
pounds of beef, and each serving
must contain at least three ounces
of cooked beef. Cooking time
cannot exceed four hours.
The recipes must be specific,
with no use of brand names and
must state the number of servings
and approximate preparation
time. Recipe entries, which
