POPPING!
Popcorn without the traditional
load of butter and heavy dose of
salt can be a low calorie and even
nutritious snack.
Popcorn contains protein,
vitamins and minerals as well as
carbohydrates and is high m bulk
and fiber. Popcorn contains no
sugar and has fewer than 55
calories in each cup, depending on
the type and amount of oil used in
cooking.
Popcorn was an American
favorite even before the movies
were invented. In fact, ar
chaeologists have found popcorn
and popping urns in Mexico and
Peru that are thousands of years
old. Then, as now, popcorn was
used to decorate as well as a snack
to eat.

corn pop, but we know the real
reason it pops is because of the
moisture content of its kernels.
Once you open a package of
popcorn you can preserve its
natural moisture by storing the
unused portion in an airtight
container. If it has been around for
awhile and is not popping into
fluffy, crisp kernels, you may have
to do a little reconditioning. Simply
fill a one-quart jar % full of pop
corn and add 1 tablespoon of water.
Cover and shake frequently, about
every five or ten minutes, until all
the water is absorbed. In two or
four days, it should be ready to pop
again.
When you make popcorn, use a
light cooking oil suitable for high
temperature cooking. Butter is not
advisable because it will smoke
and burn at high temperatures
needed to pop the kernels. If you
use an electric popper, always
perhaps the best coal
that money can buy!

DIET HABITS HELP
Don’t be fooled by exaggerated
advertising. Diets that work and
help you keep your weight within
limits require patience. It took
time to put all that weight on and
you should expect to spend some
time taking it off.
Analyzing your eating habits is
the best first step toward per
manent weight loss. Ask yourself
“what is my weakness” 7 For
some, it’s second helpings. For
others it’s desserts, TV snacks or a
lack of exercise. Each of us has to
identify our own patterns of excess
before we can improve our eating
habits. If we don’t change our
habits, when we diet, the unwanted
weight just comes right back.
Once you’ve acknowledged a
problem eating pattern, begin by
making small changes that can
become automatic after a week or
two. For instance, try eating only
one serving, or stop eating jams or
honey on your breakfast toast.
Substitute fresh fruits for gooey
pastries and calorie-rich desserts.
An alteration is usually better than
cutting out whole parts of your
meal.
