Esther says it is Paul who assembles the trestles, lumber, frames and other materials which are used for the displays. The Ephrata fair has grown, and it now attracts between 80,000 and 100,000 visitors to the town each fall. Esther comments, “Anything that draws that many people certainly has to have some benefits.” When the judging is over and the exhibits are in place, Esther heads over to Mdln Street to the food stand operated by Farm Women Society 3, of which she is a member and past president. The food stand is an institution for fair goers, and when asked what they serve, Esther answered unhesitatingly, “Good food.” In fact, they offer a different platter every day, including their well know deviled clams, ham burgers, hot dogs and a Farm Women special, added to their sandwich line last year Dairy R. Esther has been a member of Society 3 since she was 14, the youngest anyone is allowed to join. Her mother was a local apd state president of the group, and took Esther along to Society meetings. Esther in turn, has taken her two daughters along. Her daughters, Florence and Linda, are also members of the Society. Cooking comes naturally for Esther, who has also cooked for church suppers for 35 years at Swamp United Church of Christ in Reinholds. It is at this church where the Farm Women Society meets to do much of the necessary preparation for their food stand at the fair. A lifelong Republican, Esther serves as committeeman for the Cocalico area, and several years ago was named Republican of the Year. “It was really an honor. I received a citation from the House and from the Senate. ’ ’ Another of Esther’s teats at the Ephrata Fair is win" i rg the milking contest, something she did twice. In 1972 she placed first, but the following year, she says, “i was nosed out.” Unfortunately, it is the tradition forthe winner to keep the trophy only after three successive wins, so Esther had it m her possession just one year. In 1978, the tenth anniversary of the contest, all previous winners were invited back, and Esther won again. She says with delight, “i beat them all.” Esther milking cows as a child, and although she hasn’t lived on a farm for years, she feels that it is one skill that is never forgotten. As for entering future contests, she says, “I’M finished.” You’ll also find Esther at tent city where they have the lamb carcass sale and most likely she will be among the buyers. It is because of the enthusiasm of people like Esther that the local fairs in Lancaster County are a success. When this year’s Ephrata Fair is history, Esther will take a well-deserved rest, but not for long.
