Members of the 4-H babysitting project led by Michelle Rodgers brought guests to the
final meeting and practiced what they had learned. Here the children eat some of the
goodies they learned to make earlier. Members of the project will be offering baby-sitting
for young children during the 4-H Fair.
Brooklyn housewife wins New
BROOKLYN, N.Y. - Mrs.
Florence Rein, a Brooklyn
housewife and elementary school
substitute teacher who loves to
cook, will represent New York
State in the 1984 National Beef
Cook-Off Sept. 9-11 at
Alberquerque, N.M.
Mrs. Rein’s “Tropic Shores
Beef’ recipe was the winner in the
New York Beef Recipe Contest
sponsored by the New York
Cowßelles and made her eligible
for the national competition.
As the New York state winner,
Mrs. Rein received an engraved
tray and $5OO towards her expenses
to the Beef Cook-Off. The first
prize is $5,000; second prize, $2,500,
and third prize, $l,OOO. Author and
good columnist Merel Ellis heads
the panel of judges. In previous
years New York State has had a
third prize winner and an
honorable mention winner.
Mrs. Rein, 66, is a native of New
York City and a graduate of
Brooklyn College. She still sub
stitute teaches and says she
prefers the per diem teaching
because it gives her time for her
hobbies of oil painting and cooking.

She has developed her culinary
skills based on the heritage of her
mother who “was an old-fashioned
style cook.” To this she adds her
personal touches and experiments,
providing her with the opportunity
to participate in other cooking
contests. She has been a Pillsbury
Bake-Off contestant three times
and won a trip to Hawaii for a
pineapple recipe in another con
test.
The Hawaiian influence is used
in her “Tropic Shores Beef’ which
slow cooks a boneless chuck roast
with pineapple, celery, green
pepper, and onion.
Mrs. Rein said her husband,
Julian, her two grown daughters,
and her sister have been her
supporters, her unofficial judges
and tasters during her years of
cooking.
She is looking forward to the
Beef Cook-Off as an opportunity to
meet others as well as the op
portunity to please the judges with
her “Tropic Shores Beef.”
The New York Beef Recipe
Contest attracted entries from all
areas of the state. Recipes were
judged on the basis of taste, ease of
York cook-off
preparation, originality, and
appearance. The judges were John
Haight of Earlville, who is a
recently retired professor at
Morrisville State College; Gwen
Gottschall of Arkport who is a
home economics teacher; and Roy
Sargent of Penfield who is a food
services teacher at the Monroe
County BOCES. Margaret Gray of
Springwater was chairman of the
contest.
Both the New York Beef Recipe
Contest and the National Beef
Cook-Off which is co-sponsored by
the American National Cowßelles
and the Beef Industry Council of
the Livestock and Meat Board are
intended to expand consumer
awareness of lesser known and
more economical cuts of beef and
their preparation. Both state and
national competitions are for non
professional cooks and anyone
owning dairy or beef cattle or a
member of a family owning dairy
or beef cattle is not eligible for
either contest.

Lancaster Co. plans 4-H
Fair to exhibit projects
LANCASTER Thursday will
mark the culmination of several
months of hard work for Lancaster
County 4-H’ers when the Farm and
Home Center and its grounds are
transformed into a fair, giving
recognition to 4-H’ers and allowing
the public an overview of the
diversity of the 4-H program.
The 4-H Fair begins at 3 p.m.
when visitors can view exhibits of
projects and participate in the
many activities scheduled
throughout the afternoon.
Demonstrations of backpacking,
leathercraft, stenciling and break
dancing will take place, along with
a fitting and showing demon
stration on farm animals.
Workshops in macrame, pom
poms and kite making will keep
little hands busy, and helium
balloons will add to the festive
atmosphere along with free face
painting.
The rocketry shoot and archery
competition add interest and show
some of the skills 4-H’ers have
acquired. Pony rides will also be
available.
A new feature this year will be a
baby-sitting service provided by
members of the 4-H babysitting
proi'vt under the direction of
Sherry Martin, standing left, and Sherry Goss, work with
two of the visitors on the last day of the project. Crafts were
one of several activities offered to the pre-schoolers during
the two-hour period.

members will be free to browse
through the tents and exhibit areas
while pre-schoolers are amused by
activities planned by babysitting
project members.
A number of clubs will be of
fering refreshments for sale from 3
until 6:30 p.m.
The evening program begins at 7
p.m. in the auditorium, and will
feature the selection of the out
standing 4-H boy and girl, as well
as naming both junior and senior
members to the 4-H honor roll.
A talent contest will feature the
best of 4-H talent in a junior and
senior division. Other awards will
also be presented in the evening.
Registration for non-perishable
items will be 6 to 8 p.m. on Wed
nesday, August 15; perishable
items should be registered bet
ween 8 a.m. and 10 a.m. on
Thursday morning, August 16.
Judging will take place from 10:45
a.m. to 2 p.m., and all exhibits can
be picked up from 9 to 9:30 p.m.,
following the evening program.
This 4-H Fair is open to the
public, and will offer activities of
interest to all ages.
