LONDON BROIL
1 tablespoon butter or margarine
! medium onions, thinly sliced
4 teaspoon salt
! tablespoons salad oil
1 teaspoon lemon juice
I cloves garlic, crushed
& teaspoon salt
14 teaspoon pepper
2-pound high-quality flank steak,
scored
Melt butter in skillet. Cook and
stir onions and V« teaspoon salt in
butter until onions are tender.
Keep warm over low heat.
Stir together salad oil, lemon
juice, garlic, Vz teaspoon salt and
the pepper; brush on top side of
meat. Set oven control at broil
and/or 550°F. Broil meat 2 to 3
inches from heat about 5 minutes
or until brown. Turn meat; brush
with oil mixture and broil just until
rare, 5 minutes longer.
Cut meat across grain at a
slanted angle into very thin slices.
Serve with onions.

2 pounds beef round steak, cut %
inch thick
3 tablespoons cooking fat
18-ounce can tomato sauce
1 Ift-ounce can whole kernel corn,
drained
1 small onion, thinly sliced
V 4 cup water
2 teaspoons chili powder
1 teaspoon ground coriander
1 teaspoon salt
1 medium green pepper, cut in 1-
inch pieces
% cup chili sauce
1 cup (4 ounces) shredded Mon
terey Jack cheese
Slice steak in thin strips , 3 to 4
inches in length. Brown strips in
cooking fat; pour off drippings.
Add tomato sauce, com, onion,
water, chili powder, coriander and
salt; mix thoroughly. Turn mix
ture into a shallow 2-quart
casserole or baking dish. Cover
tightly and cook in a moderate
oven (350°F.) for 45 minutes.
Remove from oven. Stir in green
pepper, top with chili sauce and
sprinkle with shredded Monterey
Jack cheese. Cover and continue
baking 15 minutes. 6 to 8 servings.

Water
Partially freeze steaks to firm
and slice diagonally across the
grain into very thin strips. Com
bine cornstarch, sugar and ginger;
stir in soy sauce and garlic. Pour
mixture over meat and stir. Cut
green peppers into thin strips and
cut tomatoes into wedges. For
each serving, place desired
amount of marinated beef strips in
1 tablespoon hot fat and quickly
brown. Remove from pan. Reduce
heat; add green pepper and 1
tablespoon water to pan and cook
until green pepper is tender-crisp,
5 to 6 minutes. Stir in meat and
tomatoes and heat through. 4 to 5
servings.

HARRISBURG - Two Grange
youth were recently recognized by
the Pennsylvania State Grange for
outstanding leadership in the rural
farm organization.
Janet Rudy of Sewickley,
Allegheny County, and Keith
Fleegle, of Bedford, Bedford
County, were named 1984 State
Grange Youth Ambassadors at
State Grange Youth Camp in Camp
Kanesatake, Spruce Creek, Pa.
They will represent the State
Grange youth throughout the year
and will compete for the title of
National Youth Ambassadors at
the National Grange Session in
Portland, Maine, in November.
These individuals were selected
on the basis of their public
speaking ability, presence and
overall knowledge of the workings
of the Grange, as well as their own
involvement in the grange and
other activities. During camp, they
were given a written and oral test
in order to judge their abilities to
serve as spokespersons for the
Grange Youth.

Valley High School and is
presently majoring in accounting
and finance at the Robert Morris
College. She has been a member of
Mt. Nebo Grange in Allegheny
County for six years and a member
of the Junior Grange for several
years before that.
Fleegle, 18, is a five-year
member of Bedford Grange and a
former Junior Grange member.
The Bedford High School graduate
plans to attend California Grange
next year to study industrial arts.
