Keep the potatoes hot (140° F or above) or cold (45° F or below) until you’re ready to prepare your recipe. Potato salad has been implicated in three outbreaks, or 47 cases, of type A botulism in the United States since 1967. Analysis by the Food and Drug Administration at the time of an early outbreak showed type A and type B Clostridium botuhnum spores in samples of raw potatoes taken from the stock of one of the restaurants involved in the out breaks. Because of this finding, researchers conducted various laboratory studies to determine how potato salad could become a vehicle for botulism. Results showed that potatoes inoculated with C. botulinum spores contain toxin when held at room tem perature for some time following baking or boiling. So, if you plan to use up those leftover potatoes or get the yen to cook a batch ahead to save time, go ahead. But keep those cooked potatoes refrigerated until you’re ready to use them. , HESSTON, FARM EQUIPMENT JJ ■I 1505 Agitator If Dimensions and Weight* Over ill Icnqlh 221 '' B 8 H k z' Wrrkmq Ckpin 102 if'um qrounO > ** S * P rrav vr»ry trom turtOf to t'e^ctof) *• _PrnpPMer (In Drive W< telescoping i SliTiMv *C* W^f M !?
