Doughnuts

ORANGE TEA DOUGHNUTS
1 pound shortening
1 egg, beaten
Ms cup milk
1 teaspoon vanilla
2 teaspoons grated orange rind
Vs cup sugar
1% cups sifted enriched flour
2 teaspoons baking powder
Vi teaspoon salt
1 tablespoon cooled melted
shortening
Place shortening in a small, deep
kettle or saucepan. Depth of
melted fat should be at least 2
inches. Heat slowly to 350°F. when
dough is ready for frying.
Combine egg, milk, vanilla and
orange rind. Sift together sugar,
flour, baking powder, and salt. Mix
dry with liquid ingredients. Do not
beat. Stir in 1 tablespoon cooled,
melted shortening.
Dip teaspoon into hot shortening,
then dip up a spoonful of batter.
Quickly immerse spoon mto hot
shortening and drop off the batter
Turn doughnut balls when they
come to surface. Do not crowd
kettle; fry ony 4or 5 doughnuts at a
time. Fry for 3 to 5 minutes or until
delicately browned.
Dram doughnuts over kettle,
then place on absorbent paper.

Commerce building in Milford.
Nine women and two men of
varying ages are seated in a circle
with their eyes closed.
“Relax your toes,” Sally Foulke
intones. “Now your feet... And now
let the relaxation flow through our
legs...”
The men and women visibly
relax and sigh as their pain
dissipates. They are arthritis
sufferers who are learning new
ways to manage their disease. The
Jacobson progressive relaxation
technique helps them relieve the
stress that causes arthritis flare
ups and depression.
Group members tell of stressful
incidents that have precipitated
some of their painful attacks:
unexpected company, a new job, a
flat tire in the middle of the forest.
Then they discuss coping
strategies. Some find hot showers
effective. Others prefer ice packs.

Workshops help orthrities manege their disease
forming a helpful service for
someone else.
Foulke, a University of
Delaware extension home
economist who trains leaders for
the Arthritis Self Help course,
acknowledges the effectiveness of
each approach. Co-leader John
Glenn, a graduate of one of her
arthritis leader training sessions,
demonstrates another technique
that works for him self massage.
“Just reach back and rub your
neck or shoulders when they ache.
Nobody will ever notice,” he says.
“They’ll sure notice if I keep
rubbing my hips!” a woman
laughs It’s the second session of
the six-week program, and
members are starting to feel
comfortable with one antoher.
Foulke demonstrates exercises
that help arthritics stay limber.
She tells the members to practice
stretching exercises and
relaxation techniques at home. She
also asks everyone to bring in their
medications so she can explain
what they do.
All members of Foulke’s ar
thritis group are under a doctor’s
care and have their doctor’s
permission to attend. The purpose
of the course is not to take the
place of medical care, but to help
