Wilson, professor of animal science at Penn State, Cattle breeding systems first changed with the importation of larger, leaner breeds of cattle, primarily from Europe. The use of >■ these cattle became widespread, and are now predominately used in cross breeding systems with traditional English-type cattle. Although the larger breeds will probably never replace the traditional breeds raised in the United States, they do have flexability of slaughter weights, with less outside trunmable fat.
