Cattle breeding systems first
changed with the importation of
larger, leaner breeds of cattle,
primarily from Europe. The use of

these cattle became widespread,
and are now predominately used in
cross breeding systems with
traditional English-type cattle.
Although the larger breeds will
probably never replace the
traditional breeds raised in the
United States, they do have
flexability of slaughter weights,
with less outside trunmable fat.
According to Dr. John Zeigler,
professor of food science at Penn
State, “There is a critical balance
between the amount of fat con
tained in the meat to assure ac
ceptable eating quality, and the
amount of trinunable fat.”

harvested, plans are being made to

growing yet maintaining lean
ness,” Wilson said. "Corn silage, is
a whole plant product harvested
before the corn grain is mature. ’ ’
Cattle are also slaughtered at
slightly lighter weights than years
ago, thus decreasing the amount of
carcass fat and trunmable fat in
retail cuts. Espy said. Slight
changes in cattle grades favor
carcasses from younger cattle,
allowing cattlemen to custom
finish beef to their customers’
preferences.

control surface water runoff and at
the same time reduces soil erosion
